WW TRIPLE CHOCOLATE CHUNK MUFFINS LOW FAT
This is a knock off of Whole Foods 6 dollar per 4 Vita Top Muffins. Low fat ingredients include egg whites, yogurt and sugar substitute. To reduce calories and WW points you can also make 24 smaller muffins (2.5 points). I found this little chocolate gem at healthyisalwaysbetter.com. If you make 12 large muffins, they are 5 points per muffin.

Steps:
- Heat oven to 350, line 12 muffins with paper liners or spray muffin tin with non stick spray.
- In a food processor, mix all of the ingrredients together (except chips), blend until oats are ground and mixture is smooth,.
- Place mixture in bowl and gently stir in 1/2 of the chocolate chips, scooop mixture into prepared pans.
- Bake in oven 10 min, remove muffins and distribute the other half of the chips on top of each muffin.
- Return to oven, bake another 2-5 min or until a toothpick comes out clean.
- Cool before serving.

- Preheat oven to 400F.
- Coat a 12-hole muffin tin with cooking spray.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- Set aside Separate the egg, placing the whites in a medium bowl and the yolk in a large bowl.
- Set the whites aside.
- Add the brown sugar, applesauce, oil and vanilla to the yolk.
- Mix w/a wooden spoon until well blended.
- Add the flour mixture and stir until well combined.
- With an electric mixer on medium speed, beat the whites until soft peaks form.
- Add whites to the batter along with 4 Tbsp of the chocolate chips.
- Stir until well blended.
- Divide batter equally among the 12 muffin cups.
- Sprinkle 1/2 teaspoon chocolate chips on the top of each muffin.
- Bake until toothpick comes out cleam, about 23 minutes.
- Cool 5 minutes in the tins- then remove muffing to a rack and cool 10 minutes more.

- Preheat oven to 160 celcius.
- Prepare 5 cm muffin pans.
- Sift flour, cocoa and baking powder together.
- Add brown sugar, choc dots and white choc dots.
- Combine milk, melted butter, vanilla and eggs. Mix through the dry ingredients until all are combined.
- 3/4 fill each muffin case and bake for 20 - 25 minutes.
- when baked, cool in tin for 10 minutes before removing to wire rack.
- Enjoy warm or cold.
- Freezes well.
