EASY GREEK POTATOES YACHNI

The ingredients look long, but it's a classic store/cupboard sort of standby, cames from a favourite recipe book "tastes of the Aegean" and is an excellent one pot, whole meal, tasty potato dish... I make double and freeze half for an easy after work dinner for those days when you want something hearty but can't really be bothered, or vegetarian potluck dinners... Enjoy !

Easy Greek Potatoes Yachni image

Steps:

  • Chop the onion finely and sauté in the olive oil.
  • Cut the potatoes into slices, add them and the lemon juice to the onions and sauté for a few minutes.
  • Add half of the water and all the rest of the ingredients and simmer until the potatoes are done (adding the rest of the water if necessary) and until the sauce has reduced.
  • *Note* I notice that it depends on the brand of canned tomatoes, but if I use certain brands there is a lot of "juice" and so I omit the water from the recipe because otherwise the sauce becomes too thin.
  • Another *note* the original recipe calls for 1 1/12 cups of olive oil, but I cut it down to just half a cup to make things healthier.
  • Also, cooking time varies with variety of potato and size of your slices, I've given an estimate.

1 medium onion
4 garlic cloves, crushed
1/2 cup olive oil
1 teaspoon tomato puree
3 ripe tomatoes or 400 g canned tomatoes
2 tablespoons fresh parsley or 2 tablespoons dried parsley
1 vegetable stock cube
1/2 lemon, juice of
salt and pepper
1 teaspoon sugar
2 bay leaves
2 cups water

BRAISED VEGETABLES (YACHNI)

This is a Greek dish and is really delicious as a side dish or as a vegetarian main course. If you don't have all of the vegetables required on hand, you can omit the ones you don't have. The main vegetables are the potatoes and tomatoes. This version comes from the Australian Women's Weekly Easy Greek-Style Cookery.

Braised Vegetables (Yachni) image

Steps:

  • Heat oil in pan, add onions and garlic.
  • Cook covered over low heat, stirring occasionally until onions are very soft.
  • Add tomatoes to pan, simmer covered about 10 minutes or until soft.
  • Add potatoes, puree, water, okra and beans.
  • Simmer covered for 15 minutes.
  • Add cauliflower.
  • Simmer covered until potatoes and cauliflower are tender.
  • Stir in parsley, sugar and salt and pepper to taste.
  • Stir until heated through.

CHICKEN YAKHNI PULAO

Chicken Yakhni Pulao is a wonderful one-pot meal that's filled with flavor and spices. Use bone-in chicken thighs for the best flavor.

Chicken Yakhni Pulao image

Steps:

  • Wash the rice in several changes of cold running water until the water runs clear, then place in a bowl and soak for 30 minutes in more fresh cold water with 1⁄2 teaspoon salt.
  • In a frying pan (skillet), heat the oil over a medium-high heat. Add the sliced onions to the pan and fry gently, stirring occasionally, until golden brown and caramelized. Using a slotted spoon, remove the onions from the oil, leaving as much of the oil in the pan as possible to cook the chicken, and place on a plate to drain. Spread the onions across the plate so they crisp as they cool.
  • Keeping the heat on medium-high, add the chicken to the pan and sear it on all sides. Return half the caramelized onions to the pan.
  • To make the spice bag, place the spices in a piece of cheesecloth or muslin and knot the corners securely together so the bag does not open during cooking process.
  • Add the spice bag to the pan. Pour over enough cold water to cover the chicken and add 2 1⁄4 tsp salt. Bring the water to the boil, then lower the heat, cover with a lid and leave to cook for 20 minutes. After 10 minutes, check the chicken to make sure it is not falling apart.
  • Once the chicken is cooked, using a slotted spoon, carefully remove the chicken from the pan and place on a plate, trying to keep the meat on the bone.
  • For the yakhni, you will need approximately twice the volume of stock to rice (so 4 cups of stock to 2 cups of rice). If you have more than 4 cups, reduce the stock. If you have less than 4 cups, add some water.
  • Return the 4 cups of stock to the pan. Drain the rice and add to the pan, together with the chicken and green chiles, if using. Place the pan over a medium-high heat. Leaving the spice bag in the pan, bring the stock to the boil. Once boiling, lower the heat, cover with a lid, and leave to simmer. Check the pan often to see if the stock has been absorbed, but that the rice still retains some bite.
  • At this point, remove the rice pan from the direct heat and reduce the heat to low. Place the rice pan on a tawa (flat iron griddle pan), or the closest thing you have to a tawa-an iron plate or a flat pan-to diffuse the heat. Leave the rice pan on the tawa over a low heat for 10 minutes. Alternatively, place the rice pan in a preheated low oven for 10 minutes.
  • Once the pan has been removed from the heat source, cover the top of the pan with a dish towel and leave it undisturbed for 10 minutes.
  • Check the rice-there should be no liquid at the edges of the pan-and gently run a fork through to lift and separate the grains. To serve, garnish with the remaining caramelized onions and sprigs of mint.

  • The yakhni / broth can be drunk like a clear liquid soup or it can be made into a chicken soup with the addition of the shredded pieces of chicken.
  • If storing the yakhni / soup for later, refrigerate the yakhni for a few hours – this will result in a layer of fat that will solidify on the top. Scoop off the fat, and then store in the fridge for upto 5 days, or keep in the freezer. If kept in the freezer, it is best to let it cook for longer so that the liquid evaporates, and then the yakhni can be stored in the form of chicken yakhni cubes in an ice cube tray. The meat can be shredded and used in other recipes, or it can be eaten with the chicken yakhni.

  • Wash and clean the mutton and keep aside. Pour some hot water over the mutton and allow it to rest for 5-7 minutes. Now, throw the water away and wash the mutton again.
  • Heat ghee in a deep bottomed pan. Add bay leaf, cinnamon, cardamom, clove, whole red chilli and cook on low flame till the spices begin to crackle. Ensure that you add the whole red chillies towards the end otherwise, they will turn black.
  • Now add mutton, turmeric, salt (you can add it as per your taste) and saute for 5-7 minutes on medium flame. Now reduce the flame and cook covered till the mutton softens and is fully cooked. You can add a little water if you feel the need.
  • Whip the curd well and add it to the mutton. Ensure that the mutton is uncovered and the flame is at the lowest. Now powder the fennel, mix it with dry ginger powder and add it to the mutton.
