POTATO PURI
It is easy to prepare,no need of any khurma or curry preparation,because spices are already added. My family like them to eat as evening tiffin!. Actually it is my fantasy recipe.

Steps:
- Dissolve yeast in 1tsp water.
- Mix twoflours,salt,ajwain together.
- Mix dissolved yeast and yoghurt and add to the flour.
- Add mashed potatoes,coriander,sesame seeds,green chilli,ginger,mint one by one.
- Knead thoroughly all ingredients to fine&soft dough.
- Cover the dough with a musline cloth,let it ferment for ½ hour or the dough should be double sized.
- Knead again without any lumps and make puris.
- Roll them little thicker than normal puris.
- Otherwise they can not get puffness.
- Deep fry to golden brown colour&serve hot with coconut chutney (raita) or any other raita Knead again.
PLAIN PURI
Carol had requested for these. Puri is something every Indian loves, no matter from which part of India he/she comes. Generally, we make these on festival times, such as on Diwali which was on 14th Nov. this year. Puri-Bhagi is an excellent combination to have puris. The day puris are to be made, I skip eating even a biscuit in the morning after exercise, puris are really tasty

Steps:
- Sift all dry ingredients.
- Add ghee.
- Mix with milk (or sour milk) into a soft smooth dough.
- Roll out into 1/8 inch thickness.
- Cut in rounds.
- Fry in hot ghee or oil till a pale gold colour.
- ENJOY!

Steps:
- Mix sugar, 1 1/2 c warm water, and yeast.
- Leave aside.
- Mix dry ingredients plus ghee and add sugar/yeast mixture.
- Knead 5-10 minutes into a semi-soft dough.
- Cover and keep warm until double in size.
- Divide into 18-20 and roll into rounds, or roll the whole piece of dough flat and cut out with a biscuit cutter.
- Deep fry until golden brown on both sides, turn if necessary.
