TAHINI DRESSING

The potent combination of tahini, garlic and lemon that is so beloved throughout the Mediterranean and Middle East also makes a fantastic salad dressing when sweetened with a touch of honey. But no need to stop there - the creamy dressing is also delicious on grilled fish, roast chicken, steamed vegetables, grain bowls and more. There may be a point when you're whisking in the tahini that the sauce seems to seize or thicken. Don't worry - it will smooth out again once you begin to whisk in the water.

Tahini Dressing image

Steps:

  • Whisk together the lemon juice, honey and garlic paste in a medium bowl. Gradually whisk in the tahini. Whisk in the water a little at a time until the sauce is smooth, creamy and has the consistency of cold heavy cream. Whisk in the cumin, cayenne and 1/4 teaspoon salt. Taste add more salt if desired.

1/4 cup fresh lemon juice
1 teaspoon honey
1 clove garlic, mashed into a paste
1/2 cup well-stirred tahini
1/4 to 1/3 cup cold water
1/4 teaspoon ground cumin
Pinch ground cayenne pepper
Kosher salt

ROASTED CAULIFLOWER WITH YOGURT TAHINI DRESSING

Cauliflower is one of my favorite ingredients. My kids love it. It pairs so well with so many different things: chicken, fish, etc. I've started to use tahini a lot more in my cooking; it's a great way to bring complex flavor to a dish.

Roasted Cauliflower with Yogurt Tahini Dressing image

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, mix the cauliflower, chickpeas, shallots, olive oil, zaatar and salt and pepper. Pour into a 2-quart oval cast-iron casserole pan and place in the oven to roast until the florets are tender, about 35 minutes.
  • To make the dressing, mix the yogurt, tahini, lemon juice and salt and pepper to taste in a medium bowl. Mix well to dissolve the tahini.
  • Place the casserole on a trivet or heatproof surface. Drizzle the dressing on top and serve while still warm.

2 heads cauliflower, cut into florets
Two 15-ounce cans chickpeas, drained

2 tablespoons zaatar
6 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • To make the dressing, whisk together the yogurt and tahini until smooth. Stir in the cumin, coriander, garlic, lemon juice, salt, pepper and cayenne. Cover and refrigerate at least 1 hour.
  • Before serving, peel the avocados, halve lengthwise and remove the pit. Thinly slice them lengthwise and fan half an avocado onto each of 6 plates. Spoon the dressing over and sprinkle with almonds.
