HORSERADISH GLAZED GRILLED CHICKEN WINGS
I LOVE horseradish anything and these wings are very good. I don't always like much heat but these are flavorful and not spicy hot. There is no afterburn either which I like. If you like things spicy, add more Tabasco. The recipe came from a book called Championship Barbecue.

Steps:
- Combine all the ingredients except the wings in a small pan and bring to a boil, stirring occasionally.
- When it comes to a boil, remove from heat and set aside.
- Place wings over a medium-hot grill and grill for about 15 minutes.
- Turn, and begin basting with the sauce every 10 minutes for about another 20 minutes or until the chicken is nicely glazed on both sides, cooked through and no pink remains.

- Cut wings into three sections; discard wing tip sections. In a small saucepan, combine the marmalade, water, lemon juice, soy sauce, horseradish and garlic. Bring to a boil; cook until liquid is reduced to about 3/4 cup., Meanwhile, in a large resealable plastic bag, combine the flour, salt, paprika and pepper, add wings a few at a time, and shake to coat., In an electric skillet or deep fryer, heat oil to 375°. Fry wings, a few at a time, for 3-4 minutes on each side or until no longer pink. Drain on paper towels. , Transfer wings to a large bowl; add sauce and toss to coat. Serve immediately.

I combined a few recipes to make this "perfect" horseradish marinade! This has tons of flavor and is really easy. It would be a good dipping sauce for chicken too.

- Whisk together the first five ingredients.
- Reserve half the sauce for basting.
- Pour the other half over the chicken in a ziploc bag and marinate for 20 minutes.

- Using a sharp knife, cut through the 2 wing joints; discard wing tips. In a small saucepan, heat 1 tablespoon oil over medium heat. Add garlic; cook and stir 1 minute. Stir in ketchup, vinegar, preserves, hot sauce, Worcestershire sauce, 1 teaspoon salt and 1/2 teaspoon pepper. Cook and stir until heated through. HONEY BUTTER AND HORSERADISH GRILLED CHICKEN WINGS

- In a microwave safe bowl, gently melt the butter. When melted, stir in half of the garlic, 1 tablespoon of the lemon juice, the honey, horseradish and chopped parsley. Season generously with salt and pepper.
- In a small saucepan of salted boiling water, blanch the parsley leaves until bright green, about 1 minute. Drain and cool under running water. In a blender, puree the parsley with 2 tablespoons of water and the remaining garlic and 1 tablespoon of lemon juice until nearly smooth. With the machine on, gradually add the 1/3 cup of oil until incorporated. Season the parsley sauce with salt and pepper.
- Light a grill. Brush the chicken wing pieces with oil and season with salt and pepper. Grill over moderate heat, turning occasionally, until charred in spots and just cooked through, 20 to 25 minutes. For the last 10 minutes baste the chicken with the honey butter as you grill and turn. Transfer the chicken to a platter or plates and serve with the parsley sauce.
