Steps:

  • MICROWAVE chocolate, butter and milk in large microwaveable bowl on MEDIUM 2 min.; stir until chocolate is completely melted. Add sugar; stir until well blended. Gently stir in marshmallows.
  • SPRINKLE 1/4 of the coconut onto sheet of wax paper. Spoon 1/4 of the chocolate mixture over coconut; roll into 8-inch log, with coconut completely covering outside of log. Repeat 3 times with additional sheets of wax paper, remaining coconut and chocolate mixture. Discard any unused coconut. Wrap logs tightly and refrigerate 3 hours or until firm (see Tip).
  • CUT each log evenly into 8 slices to serve. Store leftover slices in tightly covered container in refrigerator.

Steps:

  • Place dried fruit, fruit mince, butter, sugar, orange zest and juice in a large saucepan and over low heat stir until sugar dissolves and butter melts and then remove from heat and cool.
  • Preheat oven to 160C/140C fan forced.
  • Lightly grease a 30x20cm (base measurement) slice pan and line with baking paper, extending paper at long sides for handles.
  • Stir chocolate and egg into fruit mixture.
  • Sift flours over mixture and stir to combine.
  • Spread mixture into prepared pan and the spread mixture into prepared pan and then top with nuts and bake for 45-50 minutes or until a skewer inserted at centre combes out clean.
  • Cool in pan and cut into pieces to serve.

Mix the nuts and dried fruit thoroughly in a large bowl using your hands. Sift in the flour, spice and baking powder, then add the sugar and mix everything well. Beat the eggs with the vanilla, then add to the dry mix, turning everything together well until there is no dry mix visible.
  • Turn into the prepared tin and smooth the top. Bake for 1½-1¾ hrs, then cool in the tin for 15 mins. Turn out, peel off the paper and cool on a wire rack. Dust the top thickly with icing sugar, to serve.
