DELICIOUS MEATBALLS
This delicious meatball recipe comes from my Italian grandfather. Serve with your favorite marinara sauce, freshly grated Parmesan cheese, and a side of veggies for a carb-conscious meal!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
- Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.
- Combine beef, pork, bread crumbs, Parmesan cheese, milk, onion mixture, salt, and pepper in a large bowl. Mix together using your hands as quickly as possible as overmixing can produce a tough meatball.
- Form 1 1/2-inch meatballs and place on the prepared sheet.
- Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes, turning them over after 15 minutes.

- Heat oven to 400°F. Line 13x9-inch pan with foil; spray with cooking spray.
- In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.

- Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

YUMMY MEATBALLS
I got this recipe from my favorite Betty Crocker cookbook, but it never really the same when I make them, I always add whatever herbs & spice hit me at the time of prep. They were originally served with spaghetti, but I started making them for parties and just putting them in a crockpot to keep warm, pouring "spaghetti" sauce over them. (They are also great for meatball subs... just add provalone)

Steps:
- Mix all ingredients.
- shape into rounded balls, size depends on use (spaghetti, subs or appetizers)
- Cook in a large skillet on medium heat for about 20 minutes, or until completely done.
- The recipe calls for 1/4 salad oil to cook meatballs in, but depending on the "grade" of ground beef you may or may not need the oil. Also, I usually put a loose fitting lid on the skillet and I turn the meatballs so that they cook evenly.
- You can also make ahead and freeze -- that's the best part, less to do on "party" day.

- Preheat oven to 400 degrees.
- Spray baking sheet with PAM.
- Put celery, bell pepper, egg, oil, and milk (or liquid) in blender (or food processor) and process until vegetables are finely chopped.
- In a large bowl mix together meats, oats, seasonings, Parmesan cheese, and blender concoction then gently knead until uniform in texture.
- Take a little of the mix and cook it in a skillet on the stove so you can taste it to see if it needs more seasoning. Happy with that? Then proceed to the next step --.
- Roll all the mix into balls and line them up on the baking sheet (they will shrink so it's okay if they touch). To make the balls I like to use an ice-cream or cookie scoop (depending on the size I want), it makes the job easier. Also, use a baking pan with sides, such as a jelly-roll pan or cake pan, because these are juicy little balls and I don't want you set the oven on fire with meatball juice!
- Bake 30 minutes (or until no longer pink inside).
- Remove from oven and cover with foil for about 15 minutes - don't drain off the juices because the little balls will suck it all up. Alternatively, you can transfer meatballs right out of the oven into a pan of simmering sauce of your choice.
- The meat mixture can also be formed into patties and fried in a pan on the stove like you would a burger (use cooking spray or oil in the pan).
- Serve with some kind of sauce - bar-b-que, pasta sauce, creamy mushroom sauce, or just plain old gravy.
- NOTE: these freeze very well so I frequently make a double batch and freeze some in quart size freezer bags.
