ZESTY SALSA BURGERS

Burgers with spicy tomatoes and green chilies cooked right in, topped with Pepper Jack cheese, avocado slices and more tomatoes

Zesty Salsa Burgers image

Steps:

  • 1. Spray grate of outdoor grill with grilling spray. Preheat grill to medium heat according to manufacturer's directions. Meanwhile, set aside 1/3 cup drained tomatoes. Mix together beef, remaining drained tomatoes, salt and pepper in medium bowl. Shape into 4 patties, about 1/2-inch thick.
  • 2. Grill patties 10 minutes or until cooked through (160 degrees F), turning once. Top each patty with 1 slice cheese; melt slightly.
  • 3. Place patties on bottom halves of buns. Top each patty with 3 or 4 avocado slices and a generous tablespoon of reserved tomatoes. Close with tops of buns. Serve immediately.

1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1 pound ground sirloin beef (90% lean)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 slices Pepper Jack cheese
4 hamburger buns
1 avocado, peeled, pitted and sliced

GARLIC GUACAMOLE

No tomatoes in this guac - which makes it a great one for when fresh tomatoes aren't readily available. I often make it in the summer even when tomatoes are available as this is one of my favorite guacs - fair warning though, the garlic comes through loud and clear!! Course salt (I use sea salt) is smashed with the garlic and then combined with avocado, jalapeno and onions! Adapted from Rachel Ray

Steps:

  • Halve avocado and scoop pulp into medium bowl. Add minced jalapeños and finely chopped onions.
  • Place chopped garlic clove on cutting surface and sprinkle with the sea salt (or other course salt). Using the side of a knife, mash the salt into the garlic until you have a paste.
  • Add garlic paste & lemon juice to avocado mixture and mash together with a fork until desired consistency is reached making sure to distribute garlic throughout.
  • Serve with tortilla chips! Store leftovers in tightly covered container in fridge - although best eaten right away.

GUACAMOLE BURGER

This is a tasty way to fix your regular old hamburgers. You can make it as spicy as you like by adding more chopped jalapenos to it, or substitute habaneros for a really zesty burger. It helps a lot if you have everything ready to assemble ahead of time.

Steps:

  • Halve the avocados and scoop out the flesh, toss the skin and the pit. In a bowl, mash the avocado until it is still a bit chunky. Add the salsa, salt, minced garlic (if you are using it), and the cilantro and mix until all ingredients are incorporated. You want this to be sort of chunky, not creamy.
  • Form the ground meat into four patties and grill until desired doneness.
  • When the burgers are almost done, toast the English muffins on the grill or in a toaster.
  • Then assemble the burgers in this order:.
  • a half toasted English muffin, a burger, guacamole, onion slice, tomato slice, lettuce leaf, and muffin top.
  • Pass around napkins because this can get messy.
