ASIAN STEAK AND NOODLE BOWL
A delicious combination of Asian flavors infused in lean meat, vegetables, and Japanese noodles. So comforting, you won't even know this was low-fat!

- Whisk soy sauce, vegetable oil, brown sugar, ginger, and garlic powder together in a large bowl. Pierce flank steak several times with a large fork. Place in the bowl and cover with plastic wrap. Let marinate in the refrigerator, at least 4 hours and up to overnight.
- Bring a large pot of salted water to a boil. Cook udon noodles in boiling water, stirring occasionally, until tender yet firm to the bite, 13 to 14 minutes. Drain.
- Heat a large skillet over high heat. Remove steak from marinade and cook until well-browned, about 2 minutes per side. Reserve marinade.
- Preheat grill for medium heat and lightly oil the grate. Grill steak, basting with half of the reserved marinade, until internal temperature reaches 140 degrees F (60 degrees C) for medium or 150 degrees F (65 degrees C) for medium-well, at least 10 minutes per side. Slice steak thinly against the grain.
- Combine remaining marinade, snow peas, broccoli florets, and mirin in the skillet. Cook and stir over medium-high heat until snow peas are tender, about 2 minutes. Add drained noodles; mix well to combine.
- Divide noodle mixture among large bowls. Top with steak slices.

- Cook noodles according to package directions; drain., Meanwhile, in a large skillet, cook and crumble beef with onion over medium-high heat until no longer pink, 6-8 minutes. Stir in salt, pepper, tomato sauce and water; bring to a boil. Reduce heat; simmer, covered, 10 minutes. , Stir in corn and noodles; heat through. Sprinkle with cheese; let stand, covered, until cheese is melted.

SIMPLE BEEF TIPS AND NOODLES
This is one of my family favorites; it's a great starter recipe for using a pressure cooker. It is wonderful any time of year, but we like it best in the cooler weather. Very quick and easy to make after a day at work. It can also be made in a slow cooker.

- Heat oil in the pressure cooker over medium-high heat and stir in beef cubes. Cook until the beef is browned on all sides; remove beef and set it aside. Drain and discard excess grease.
- Lower the heat to medium and add onion; cook and stir until onion has softened and turned translucent, about 5 minutes. Stir in garlic and mushrooms and continue to cook about 5 minutes more, until garlic is fragrant but not brown.
- Pour in beef stock, beef stew meat, and any accumulated drippings; season with salt and pepper. Return to high heat, seal the lid, and bring to full pressure.
- Reduce the heat to low, maintaining full pressure, and cook for 20 minutes.
- While the stew is cooking, bring a large pot of lightly salted water to a boil. Stir in noodles and cook until tender, stirring often, about 8 minutes. Drain and set aside.
- Remove the pressure cooker from the heat and allow the pressure to drop naturally. Dissolve cornstarch into 1/2 cup of cold water. When the pressure has dropped, remove the lid and whisk in the cornstarch mixture. Bring the beef and mushrooms back to a boil and cook, stirring constantly, for 2 minutes or until the sauce has thickened. Pour the beef over the noodles and serve.

- Place onion and 1 1/2 tablespoons of the butter in a large skillet over medium heat. Add the salt and sugar and stir constantly for about 25 minutes until browned. Add a splash of the red wine to the pan to deglaze, scrapping off any browned bits from the bottom. Spoon onto a plate and set aside. Wipe out the pan.
- While the onions are cooking, season the beef with the salt and the pepper. Toss in the flour. Add the vegetable oil to the pan after the onions are done cooking over medium-high heat. - Add to the pan the remaining butter, the garlic and the fresh herbs. Cook for 2-3 minutes until fragrant over medium heat. Add the onions back into the pan. Sprinkle in the remaining flour and cook for 2 minutes, whisking the ingredients together.
- While the onions and the flour cooks, mix together the steak sauce and beef stock in a small bowl.
