SUNNY'S 1, 2, 3 SPICY BEAN DIP
Steps:
- Combine drained and rinsed beans, undrained beans, yogurt, chile garlic sauce, a pinch of salt and a few grinds of pepper in a food processor. Blend until smooth while drizzling in a bit of olive oil to help the process along and to get the desired thickness.
- Pour the dip into a serving bowl and garnish with a drizzle of olive oil and a dollop of chile sauce in the center. Serve with nut crackers, pita chips or any dippables.
3, 2, 1 DIP
I got this from a friend. It's easy and delicious and fattening. Serve with cocktail bread. There will be a lot of oil at the top of the dish when it comes out of the oven, so be sure to spoon it all off before serving. Also, if you like more onion, dice a medium onion instead of a small onion.

- * While everyone I know loves this dip, I found it to be a bit bland. The second time I made it, I used low fat mayonnaise, and I added one teaspoon garlic powder, and 1/4 teaspoon black pepper. I found the taste better, and there wasn't an inch of grease on top of the dip when it came out of the oven.

Steps:
- Cook sausage and drain.
- Pour in crock-pot, then add cream cheese and Ro*Tel.
- Cook on high till cheese melts, then turn on warm to keep warm.

- 1. Using microwave dish, cube cheese, add Rotel tomatoes; microwave 5 - 10 minutes, stirring every three minutes until smooth and creamy. Cook sausage, drain grease; add to cheese mixture, stir well. Can be transferred to a crock pot. Very good served with tortilla chips and/or crackers of any kind.

Transfer sausage to slow cooker, add the cream cheese, Rotel, cover, and cook until the cream cheese has melted and dip can be stirred smooth, about 30 to 45 minutes depending on high or low cooking temp and your slow cooker. Optionally garnish before serving.
