5 MINUTE BANANA BREAD

This is so good! It's really dense. A nice little treat. If your counting Weight Watchers 1 Point. I found this on Thinner Times. This came from Obesity Help. I have not tried this, just posting for safe keeping.

5 Minute Banana Bread image

Steps:

  • Mix everything but the nuts in blender/bullet-- stir in nuts with a spoon. Pour into Pyrex measuring cup, small bowl or small loaf pan (glass loaf pan -- do NOT put metal in the microwave, precious) sprayed with a little non-stick spray. Microwave on high for 5 minutes. When cool, cut into thin slices with sharp knife and store in Tupperware.
  • And seriously? 5 minutes in the microwave. Don't tell me you don't have time.

2/3 of small banana (or live dangerously and use the whole thing!)
3 tablespoons wheat flour
2 tablespoons ground flax seeds
2 tablespoons sugar-free syrup (I used Davinci Caramel)
2 tablespoons Splenda sugar substitute
1/4 teaspoon vanilla extract
1 scoop protein powder (vanilla Advant Edge recommended)
3 tablespoons skim milk
1 dash salt
1 1/2 tablespoons chopped pecans

This is such a simple and easy recipe - I have not tried it yet, but I do have a recipe for a Miracle Whip Chocolate Cake and it's simple delicious, so I thought this would be just as super good!! Good luck with your baking -

Miracle Whip

Steps:

  • Preheat oven to 350°F.
  • Combine dressing and bananas in large bowl. Mix flour, sugar and baking soda. Add to dressing mixture; stir just until moistened; batter will be a little lumpy.
  • Pour into greased 9x5-inch loaf pan.
  • Bake 55 - 60 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove to wire rack. Cool completely.
  • MAKE IT EASY: For easier slicing, wrap bread and store it overnight before slicing to serve.

  • In a medium bowl, combine the flour, baking soda, and salt; whisk together and set aside. Set a fine-mesh strainer over a separate medium bowl.
  • If using bananas that have been frozen and defrosted, scoop banana innards into the strainer and let drain, stirring occasionally, for 10-15 minutes, until you have about 1/2 cup liquid in the bowl.
  • If using fresh bananas, scoop innards into a microwave-safe bowl. Cover the bowl with plastic wrap and cut 3-4 slits in the wrap to act as steam vents. Microwave on high for about 5 minutes, until the bananas are soft and have released their liquid. Transfer to the fine-mesh strainer and let drain, stirring occasionally, for 10-15 minutes, until you have about 1/2 cup liquid in the bowl.
