MARCELLA HAZAN'S TOMATO SAUCE
This is perhaps the most famous recipe created by Marcella Hazan, the cookbook author who changed how Americans cook Italian food. It also may be her easiest. Use your favorite canned tomatoes for this and don't be scared off by the butter. It gives the sauce an unparalleled velvety richness.

Steps:
- Combine the olive oil, red pepper flakes, sea salt, and garlic in a cold saucepan.
- Stir while you heat the mixture over medium-high heat, saute just 45 seconds or so until everything is fragrant - you don't want the garlic to brown.
- Stir in the tomatoes and heat to a gentle simmer, this takes just a couple minutes.
- Remove from heat and carefully take a taste (you don't want to burn your tongue) -- If the sauce needs more salt add it now.
- Stir in the lemon zest, and that's it! Simple, quick, and delicious.

- Purée tomatoes in a food processor until they’re as smooth or chunky as you like. Transfer tomatoes to a large Dutch oven or other heavy pot. (Or, use an immersion blender and blend directly in pot.) Add garlic, oil, and a 5-finger pinch of salt. Bring to a boil and cook, stirring occasionally, until sauce is reduced by about one-third, about 20 minutes. Stir in butter.
- Do Ahead: Sauce can be made 5 days ahead; cover and chill. Or let cool to room temperature and freeze up to 3 months.
