GROUND TURKEY BOLOGNESE
I stole this recipe from my wife and now I'm sharing it with you! This is by no means a traditional pasta Bolognese, which usually contains beef, but even that is a secret to some members of my family. Now it can be your secret too!

Steps:
- Heat the oil and butter in a large heavy-bottom saucepan over medium heat until the butter melts. Add the onions, carrots and celery. Cook, stirring occasionally, until the vegetables soften and the onion is translucent, 8 to 10 minutes. Add the garlic and oregano and cook, stirring frequently, for 1 minute.
- Add the turkey and cook, breaking up clumps of the meat, until it is no longer pink, about 10 minutes. Add the tomato paste and cook 5 minutes longer, stirring frequently.
- Pour in the wine and scrape the bottom of the pan to remove any browned bits. Simmer until the wine is reduced by half. Add the broth and salt and pepper to taste and cook, covered, for 1 hour over low heat. Add the milk and simmer for 20 minutes more, stirring occasionally to keep the sauce from burning. Season again with salt and pepper to taste.
- Meanwhile, cook the pasta according to package directions or your favorite method. Drain the pasta and fold it into the sauce. Serve topped with basil and Parmesan.
"TASTEE" SANDWICH
If you have grown up, lived, or traveled to the Midwest, this recipe is from a popular restaurant that was in Lincoln, NE. I've been told it's an acquired taste, but having grown up on them, I love them! It's a loose meat sandwich. Use a slotted spoon to portion out the meat. Serve on buns with mustard and sliced dill pickles.

Steps:
- Combine ketchup, salt, mustard, horseradish, Worcestershire sauce, and ground black pepper in a 1-cup measuring cup. Add more ketchup if combined ingredients don't equal 1 cup. Stir until well mixed. Place ground beef in a stock pot; pour ketchup mixture over the ground beef.
- Fill the same measuring cup with warm water. Stir to loosen any fine seasoning remaining; pour into stock pot. Stir onion into ground beef mixture; add monosodium glutamate. Mix until ingredients are well combined.
- Cook and stir the ground beef mixture over low heat until the ground beef is finely crumbled, about 15 minutes. Bring to a boil; cook until flavors blend, about 25 minutes.

Steps:
- Heat oil to temperature in the pan! When hot, add 2 tbsp of the butter!
- Add delicious onion, and brown it. When onion is translucent, add the garlic until fragrant!
- Add meat! Delicious meat. Begin to brown meat with onions and garlic!
- Season meat with thyme, and a few dashes of Worcestershire sauce! The meat should taste strongly, so you can taste it through your sauce!
- Once meat is tasty and flavorful, and cooked, add the jar of Prego! You can use any sauce you want but I find run of the mill Ragu/Prego etc works the best so your meat flavor comes through! Combine with the meat and allow to reduce a bit, to let flavors marry.
- Serve over your favorite pasta! Tubbortons!

COPYCAT DURKEE FAMOUS SAUCE
Eugene R. Durkee created the first prepared and packaged salad dressing called Durkee Famous Sauce in 1857. To appreciate his endeavor, it is important to remember this was created prior to refrigeration. His creation was carried west by the pioneers. Historians have found old, discarded Durkee dressing bottles along covered-wagon trails. Durkee Famous Sauce was even purported to be stocked in Mary Todd Lincoln's pantry and served to Abraham Lincoln in the White House during the Civil War.

Steps:
- Grease well and chill a mold or small casserole dish.
- Cut the turkey breast into 1 inch cubes and put them in a food processor or blender. Process until the turkey is the texture of fine hamburger. While continuing to process, slowly add the egg whites, then the cream. Season with salt (generously), pepper, nutmeg and brandy. The mousse should be smooth-textured.
- Spoon the mixture into the mold or dish and place the dish in a pan containing 1 inch of boiling water. Cover the mousse dish with aluminum foil and cook in a preheated 350-degree oven for 30 minutes. If the mousse is firm to the touch, it is done. If not, remove the foil and cook several minutes more.

Steps:
- Heat the oil to temperature in a large skillet. When water sizzles, add 1 tbsp of the butter and the onions. Cook until translucent.
- Add the sliced garlic and combine, until fragrant.
- Add the Turkey and the last tbsp of butter. While its cooking, season with salt, pepper, thyme, and Worcestershire sauce. Start off by coloring the meat with the sauce, and add more if you feel it needs it. The meat onion mixture should be strongly flavorful to punch through your sauce.
- Add the sauce gradually until a desired consistency is reached. About 1 jar for 1lb of meat is a good rule if you are altering this recipe for more. If you use more than 2 lbs of meat, get a second onion too. And a bigger skillet! Once the sauce is combined, and thoroughly heated, allow to rest at a low temperature and bubble slightly to reduce it. So make it slightly thinner the first run, and then let it thicken to your consistency. Sauce should marry flavors well with a slightly sweet overtone.
- Serve over your favorite pasta! Tubbortons!
