TROPICAL TILAPIA

Steps:

  • Season fillets with jerk seasoning. In a large nonstick skillet coated with cooking spray, cook fillets over medium-high heat for 3-5 minutes or until fish flakes easily with a fork, turning once. Transfer to a serving platter and keep warm., In the same skillet, combine the fruit, onions, jelly and almonds; heat through. Stir in mint and lime juice. Serve with fish and rice.

4 tilapia fillets (4 ounces each)
1 teaspoon Caribbean jerk seasoning
1 can (15 ounces) mixed tropical fruit, undrained
1/4 cup dried tropical fruit
2 green onions, chopped
1/4 cup red jalapeno pepper jelly
2 tablespoons sliced almonds
2 tablespoons minced fresh mint
1 tablespoon lime juice
Hot cooked rice

AFRICAN TILAPIA

This marinated Tilapia is grilled hot while basted in the marinade to give it lots of extra flavor. It's a favorite around my room mates!

Steps:

  • Combine all ingredients except for the tilapia.
  • Mix well until the salt is disolved.
  • Place tilapia in a glass dish and cover with marinade.
  • Turn to coat and set aside for 20 minutes. Preheat grill.
  • Pour marinade into a saucepan and bring to a boil.Allow to cool.
  • Grill tilapia fillets of a medium high heat for about 4 to 5 minutes per side or until the fish flakes easily and has an even appearance all the way through.
  • Serve by pouring a small amount of the sauce over the tilapia fillets.

  • Combine the celery, parsley and basil together with the garlic, ginger and 1 onion (roughly chopped) in a blender. Add a quarter cup of water and blend into a paste. We'll call this the green spice mixture. Set the green spice mixture aside.
  • Use kitchen shears to trim the fins of the fish. Totally cut out the fins towards the tail of the fish. Also use a pairing knife to cut out the gills from the head of the fish.
  • Rinse fish thoroughly and pat dry with paper towel. Make four diagonal cuts on each side of the fish. Sprinkle on 1/4 teaspoon of salt and 1/4 teaspoon of withe pepper. Rub well all over the fish.
  • Mix together 4 tablespoons of the green spice mixture with 2 tablespoons of oil and 1 teaspoon of bouillon powder. Rub the mixture all over the fish being careful to fit some into the diagonal cuts.
