KEY LIME TART

Equal parts creamy and tart, this spin on the classic Key lime pie works just as well with traditional limes as it does with the smaller, sweeter variety.

Steps:

  • Preheat oven to 350 degrees. Process graham crackers and 2 tablespoons sugar in a food processor until fine crumbs form; add butter. Process until combined. Transfer mixture to a 9-inch tart pan with a removable bottom; pat into bottom and up sides. Place pan on a baking sheet, and bake until crust is fragrant and slightly colored, about 10 minutes.
  • Meanwhile, in a medium bowl, combine condensed milk, lime juice, egg yolks, remaining 1/2 cup sugar, and salt; whisk until smooth. Pour mixture into crust (warm or cool is fine), leaving 1/8 inch at the top; return to oven. Bake until filling is set around edge but still slightly loose in center, 20 to 25 minutes.
  • Cool completely at room temperature; then refrigerate until chilled, at least 2 hours. Serve, garnished with zest, if desired.

9 to 10 graham crackers (each 2 1/2 by 5 inches)

3/4 cup fresh lime juice (from 4 to 6 limes), or fresh or bottled key-lime juice

Steps:

  • Preheat oven to 325°. In a small bowl, combine cracker crumbs, butter, almonds and sugar. Press onto the bottom and up the sides of a greased 9-in. tart pan. Bake until edges are lightly browned, 15-18 minutes., In a large bowl, whisk egg yolks, milk, lime juice and zest. Pour over crust. Bake until center is almost set, 12-14 minutes. Cool on a wire rack. Refrigerate at least 2 hours., In a large bowl, beat cream until it begins to thicken. Add sugar; beat until stiff peaks form. Fold in sour cream and grated lime zest. Spread over tart. Garnish with raspberries and lime wedges.

BLUEBERRY KEY LIME TART

This cool, refreshing treat from the King Arthur Flour Baker's Catalogue is a wonderful addition to any summer table. The combination of flavors in this tart is sublime, and I highly recommend making your own crust. Don't be put off by all the ingredients--the tart comes together pretty quickly, and you can whip up the the berry topping just before serving. Cook time includes cooling time.

Blueberry Key Lime Tart image

Steps:

  • Preheat the oven to 350°F.
  • TO MAKE THE CRUST:.
  • Mix the ingredients and press them into a 9" removable bottom tart pan or 9" pie plate. Bake for 10-12 minutes, until lightly browned. Place on a rack to cool. Reduce the oven heat to 325°F.
  • TO MAKE THE FILLING:.
  • Whisk together the the egg yolks, condensed milk, and lime juice and zest until well blended; the mixture will thicken almost immediately. Pour into the crust and bake for 18-20 minutes, till just set. Remove from the oven, and cool at room temperature for several hours before topping.
  • TO MAKE THE TOPPING:.
  • Rinse the berries, and set aside all but 3/4 cup to dry. Stir together the water or fruit juice, salt, lime juice, sugar, and cornstarch in a medium-sized saucepan set over medium heat, cooking till the sugar has dissolved. Add the 3/4 cup berries, and bring to a boil. Remove from heat, pour over the reserved beries and spoon onto the cooled tart.
  • Chill for several hours.

Lemon and Lime Tart image

Steps:

  • Spray 10-inch tart pan with removable bottom with cooking spray.
  • Whisk all-purpose flour, cake flour and salt in medium bowl.
  • Beat butter and powdered sugar in large bowl at medium speed until smooth. Beat in 1 egg yolk and vanilla until combined. Stir in flour mixture just until combined. Shape into flat round; cover and refrigerate 30 to 60 minutes or until firm.
  • Roll dough between two sheets of waxed paper into 12-inch round 1/8 inch thick. Remove top piece of waxed paper; invert dough into tart pan. Remove waxed paper; carefully press dough into pan. Trim dough even with top of pan; freeze 30 minutes.
  • Meanwhile, heat oven to 375°F.
  • Line crust with foil, covering edges; fill with pie weights or dried beans. Bake 15 minutes; remove foil and weights. Reduce oven temperature to 350°F Bake 10 minutes to firm and lightly brown crust. Cool on wire rack while preparing filling.
  • Whisk condensed milk and lemon and lime juices in large bowl until blended. Whisk in 5 egg yolks and lemon peel until blended; pour into slightly cooled crust.
  • Bake at 350°F for 30 minutes or until center is firm and set. Cool on wire rack to room temperature, about 1 hour. Cover and refrigerate 8 hours or overnight. Serve chilled. Refrigerate leftovers.

AGAVE KEY LIME TART

This is my own recipe for a delicious tart using agave nectar, key lime juice and a whole wheat butter crust. I was looking for a use for agave since I gave up white sugar as well as one using a whole wheat crust since I gave up white flour! Agave is low glycemic and metabolizes slower than sugar. The taste is indistinguishable from sugar (perhaps even better, in my opinion). I couldn't find whole wheat pastry flour in my area so I used Ultragrain White Whole Wheat flour by Eagle Mills. The crust was tender and flaky, not heavy at all. I make my crust in a food processor - or you can do it by hand. I use all organic ingredients when possible (butter, eggs, key lime juice, etc..) Also, if you're not a fan of key lime juice, lemon juice can be substituted, but also add some grated zest.

Agave Key Lime Tart image

Steps:

  • Preheat oven to 400 degrees with rack in the center of the oven.
  • For the crust: Place the flour in a bowl and whisk in salt. Add butter and blend until mixture resembles coarse meal. Add the agave nectar. Work mixture with fingertips until dough comes together in moist clumps, adding water by teaspoonfuls if dry. Do not overwork the dough.
  • Gather dough into ball; flatten into disk. Wrap in plastic; chill until firm, at least 1 hour.
  • Press the dough firmly and evenly into the tart pan. Press the pastry in where the sides meet the bottom to make a right angle or the dough will be too thick there. Prick the dough in several places with a fork and place on a baking sheet.
  • Bake until the dough is set, about 12 to 14 minutes.
  • For the filling: While the tart shell is baking, whisk the agave nectar, eggs and key lime juice.
  • When the shell is ready, pull the baking sheet out while still on the oven rack and pour in the filling without removing the pie crust from the oven. Slowly slide the rack back in and reduce the heat to 350 degrees. Bake until the filling is firm and just set in the center, about 25 to 35 minutes. Cool and serve.
