AIR-FRYER STUFFED ZUCCHINI

When your garden is overflowing with zucchini, it's time to pull out your air fryer. Filled with ground beef and cheese, this quick to prepare meal is a delicious way to enjoy summer's bounty. -Tracey Rosato, Markham, Ontario

Air-Fryer Stuffed Zucchini image

Steps:

  • Cut each zucchini in half lengthwise; cut a thin slice from the bottoms so they sit flat. Scoop out pulp, leaving 1/4-in. shells. , In a large cast-iron or other heavy skillet over medium heat, cook beef and garlic until meat is no longer pink; drain. Stir in Havarti cheese, 1/2 cup feta cheese, basil, salt and pepper. , Preheat air fryer to 350°. Fill zucchini with meat mixture. Place in greased air fryer. Cook 8 minutes. Top with remaining 1/4 cup feta; cook until zucchini is tender and cheese is melted, about 5 minutes.

  • Thoroughly rinse your fresh produce and pat with a paper towel or clean dishcloth to dry. Cut the zucchini lengthwise down the center. Use a spoon and hollow out the center of the zucchini by removing all the seeds. Leave at least ¼ inch borders around the skin to hold the filling in.
  • Get a medium bowl and combine the diced tomatoes, red pepper, jalapeno, seasonings, and cheese. Add salt and pepper to taste. Stir it well until they are evenly combined.
  • Scoop the mixture you made and divide it to fill the two zucchini boats. Spray or brush the boats with olive oil to give it a vibrant glow.
  • Transfer the stuffed zucchinis to your Air Fryer basket. Turn the air fryer up to 390° F and leave to cook for about 12 minutes.
