- In a large bowl, dissolve yeast in warm water. Add the milk, butter, sugar, eggs, salt and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; roll out to a 15x10-in. rectangle. In a large bowl, beat filling ingredients until smooth. Spread over dough. , Roll up jelly-roll style, starting with a short side; seal seams. Cut into 12 slices. Place cut side down in a greased 12-in. cast-iron skillet or 13x9-in. baking pan. Cover and let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°. , Combine topping ingredients; sprinkle over rolls. Bake until golden brown, 35-40 minutes. Cool on a wire rack. , In a small bowl, combine confectioners' sugar, extract and enough milk to achieve drizzling consistency; drizzle over rolls.

BANKET (ALMOND ROLL)
This is my husbands trademark recipe! He immigrated to the US after we married (from Holland) and 'brought to here' some of his most loved recipes from back home that he wasnted to continue to make here. This is one of his (and my) favorites. Keep in mind that it's a very sweet almond roll... so you don't want to take HUGE pieces when slicing. It's really good with a nice hot cup of coffee! It also makes quite a bit, so we enjoy making it around the holidays and giving a few of the 'rolls' to family! I hope you enjoy it as much as we do.

Steps:
- In large bowl, cut cold butter into flour until the mixture has a crumb-like texture. Make a well in the center, add cold water. Mix together until the mixture forms a ball. Don't overmix! Chill dough.
- Preheat ovem to 450 degrees. Grease cookie sheets (2).
- In a medium bowl, blend together almond paste, eggs, sugar, almond extract and salt.
- Divide dough in 4 parts, and roll into 15" strips. Place filling along the center of each long strip of dough. Roll up, and pinch the ends to seal.
- Place strips 2" apart on cookie sheets. Brush with egg white, and sprinkle with sugar.
- Bake for 15-20 minutes or until golden brown.
- Cut into slices when cooled a little, and enjoy!

- Stir together the almond flour, tapioca flour, sea salt, and baking soda in a mixing bowl until well-combined. In a separate bowl, whisk together the eggs and cider vinegar until well-beaten. Pour the almond flour mixture into the bowl with the whisked eggs and stir to combine. Add the coconut oil and stir until incorporated into the dough. Note: the dough should be very thick, but hold together easily.
- Roll the dough into a ball, then separate it into 6 equal-sized pieces. Roll each piece of dough into a ball, then flatten into a disc shape with a rounded top (make it look like a dinner roll ;)
- Place the dough discs on the baking sheet and sprinkle with sesame seeds (if desired). Bake on the center rack of the preheated oven for 10 to 15 minutes, until golden-brown on top.

- Place milk in a microwave safe measuring cup. Heat for 30-45 seconds in the microwave, until it’s about 120°F (use a thermometer if you have one or think hot bathwater when feeling it. Add yeast and 1/2 teaspoon of sugar and stir. Let it sit for a few minutes to proof.
- Place 1/3 cup sugar, butter, salt, and egg in the bowl of a stand mixer fitted with the paddle attachment. Mix until the butter is distributed throughout the liquids, although it may be chunky. Pour in the milk/yeast mixture and stir for a few seconds.
- Add flour and stir with the paddle attachment just until the mixture starts to stick to the paddle. Then replace the paddle with the dough hook. Continue mixing on low speed until the dough forms a ball in the center of the bowl. The dough should be in one piece and it will be slightly sticky, but you should be able to handle it without getting too much dough on your fingers. If it’s really wet, add up to 1/2 cup more flour (but add it 1/4 cup at a time). I always use 3 cups, but depending on the temperature in your kitchen and where you live, you may need a little more.
- Spray a large bowl with cooking spray and place the dough ball in it. Spray the top of the dough ball with cooking spray (lightly) and cover the bowl with plastic wrap. Let sit for 1-2 hours until it doubles in size.
