ULTIMATE GRILLED CHEESE
A classic grilled cheese taken to another level with the simplest ingredients and a little time. I recommend serving with a bowl of tomato soup.

Steps:
- Assemble the sandwich by placing Cheddar and mozzarella cheese on the bread. Season with oregano, salt, and pepper.
- Heat butter in a pan over medium-low heat. Add sandwich and cook until cheeses melt, 3 to 5 minutes, increasing heat if needed. Flip and cook until golden brown, 3 to 5 minutes more.
- Cut in half and top with parsley and chives.

SWEET GRILLED CHEESE
Steps:
- Preheat a grill pan over medium heat.
- In a medium-sized bowl add the mascarpone and cream cheese. Using an electric mixer on medium speed, beat the cheeses until combined. Slowly add the powdered sugar, while mixing, until well incorporated and fluffy. Set aside.
- Lay out the 12 slices of pound cake on a work surface. Spread a liberal amount of the cream mixture on 6 slices and cover with the remaining 6 slices. Spread each side of the sandwiches with a little butter. Put them on the hot grill pan and cook for 2 to 3 minutes on each side. Remove them to a cutting board. Slice each sandwich, diagonally, and arrange them on a platter before serving.

This recipe is so simple that I hesitated to post it, but it has given me so much joy that I decided to share it anyway. The recipe makes a diner-style grilled cheese in less than three steps, and, better yet, it involves no frying pans and no griddles. How? You use your George Foreman grill! I am almost ashamed to admit that I make this recipe at least twice a week. Sad, I know... :)

- Heat indoor grill. Meanwhile, butter the two slices of bread as if you were buttering toast.
- Put bread slices buttered side out, and, between them, sandwich the cheese.
- When the grill is hot, plop the sandwich on the grill.
- Your sandwich is done when it is golden and puffy, just like a diner grilled cheese! Perfect!

Steps:
- Spread one side of each bread slice with the butter. On a clean work surface, place 4 slices buttered-side down. Divide the cheese and ham among those 4 slices. Place the remaining 4 slices of bread on top, buttered-side up.
- Heat a grill pan or a 12-inch skillet with a lid over medium heat until warm. Place the sandwiches in the skillet (in batches if necessary) and cook, covered, 3 to 5 minutes on each side, or until cheese melts and bread is golden brown.
- Cut each sandwich in half; slide in 1 or 2 tomato slices and serve hot.
