AMAZING CHEAP HIGH PROTEIN LOW CARB PRETEND POTATO MASH

NOTE: Split mung beans are yellow, also known as Yellow mung, Mung Dal or Moong dal. EXTREME! Extremely creamy, extremely delicious, extremely cheap, extremely easy, dairy-free, low carbohydrate, high protein substitute for Potato Mash?? Yes please. This was a "why not" experiment that worked out so well my mouth is watering just writing about it. To top off the EXTREME, mung beans are full of vitamins and minerals - high in Magnesium, Phosphorous, Potassium, Manganese, Zinc, Iron, Copper, Thiamin, Folate -- and very high in dietary fibre.

Amazing Cheap High Protein Low Carb Pretend Potato Mash image

Steps:

  • Wash split mung beans 2-3 times in cold water.
  • Soak split mung beans in cold water for 30 minutes.
  • Drain.
  • Put all ingredients into pressure cooker.
  • Place pressure cooker on high pressure, high heat.
  • Once cooker is at desired pressure, reduce heat.
  • Count 5 minutes, turn off heat.
  • Allow cooker to release pressure naturely (do not vent pressure, or quick release with water - let it cool naturely. 10 minutes or so).
  • Open cooker, texture should be extremely creamy mashed potato - almost custardy.
  • Season with salt and pepper to taste, stir well.

White Lentil, Split Pea and Potato Mash image

Steps:

  • Peel and boil potatoes.
  • Heat oil in wok.
  • Add split yellow peas, white lentils and black mustard seeds and fry until the mustard seeds start to pop.
  • Add tumeric, sugar, salt and onion and fry until onion starts to become translucent.
  • Add potatoes, chilli and ginger, mixing and mashing up the potatoe.
  • When the potatoes start to stick to the sides of the wok, add the lime juice, remove from heat and serve.

Sweet Potato Mash image

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Prick the sweet potatoes with a fork and place on an oven tray with the unpeeled cloves of garlic, and bake for 1 hour or until tender. Remove from the oven and set aside for 15 minutes, or until cool enough to handle.
  • Cut the potatoes in half and scoop out the flesh into a large bowl. Squeeze the cloves of garlic from their skin and add them to the potato flesh.
  • Stir in the honey and unsalted butter, milk and salt to taste, and mash the potatoes until there are no lumps and the consistency is creamy.

My mom invented this recipe a few years ago for our low carb lifestyle. It makes a nice break from eggs. We have often served these pancakes to guests not on a diet and they enjoy them too. It's a great way to get your omega-3's from flax. The recipe is very flexible, and you don't even need to measure the ingredients--just eyeball the proportions, or vary it to suit yourself after you've gotten the idea. I have used sour cream or cottage cheese instead of ricotta, and it works just as well (plain yogurt would be good, too). Cottage cheese makes a very tender, flavorful pancake, but omit the salt because cottage cheese is quite salty compared to the others.

Steps:

  • Mix all ingredients together and stir well. (Optional: You may also add one packet of artificial sweetener if you are accustomed to recipes that call for sugar.).
  • Spoon onto preheated, oiled griddle and cook as usual.
  • Serve with butter and low-carb syrup, or sour cream and berries.
  • Note: If you want the batter a little thinner, stir in water, 1 tablespoon at a time. Batter will thicken as it sits, so if you refrigerate it till the next day, you will probably need to thin it. If the batter is too thin, stir in a little more flax.
  • Also note: Flax seed should always be fresh ground (keep a dedicated coffee grinder for this purpose) or stored in the freezer. You may use either regular (brown) flax, or golden flax, which produces a lighter texture and color. You can often get it in bulk bins at your health food store for a great price.
