FRIED CHICKEN COATING

- In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: 3 batches (2-1/2 cups total)., To prepare chicken: Place about 3/4 cup of coating in a large resealable plastic bag. In a shallow bowl, beat eggs and milk. Dip chicken pieces into egg mixture, then place in the bag; seal and shake until coated. , In a large skillet, heat 1/2 in. of oil over medium-high heat. Brown chicken on all sides; remove to a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 50-60 minutes or until juices run clear.

AMISH OVEN-FRIED CHICKEN
This is a great way to "fry" that chicken without all of the splatter on top of the stove. A good recipe, and I think it is good cold too.

Steps:
- Place oil and butter in a shallow cooking pan and place in 375ºF oven to melt butter, set aside.
- In a large paper sack, combine dry ingredients.
- Roll the chicken pieces, 3 at a time, in butter and oil then drop into a sack and shake to cover.
- Place on a plate until all pieces are coated.
- Leave any excess butter and oil in pan.
- Place chicken in the pan skin side down (or its just as good if you remove all the skin first).
- Bake at 375ºF for 45 minutes.
- Turn chicken pieces over and bake 5 to 10 minutes longer or until crust begins to bubble.
AMISH FRIED CHICKEN COATING
This recipe comes from an elderly Amish lady. It makes the best (oven baked) fried chicken you have ever tasted. This coating can also be used to fry delicious fish and pork chops. This recipe makes 9-1/2 cups of coating mix.

- Mix all ingredients together. Store in a large covered jar or plastic zippered bag; attach instructions.
- Instructions: Dip chicken pieces in beaten egg, then in coating. In a large skillet, fry chicken lightly in shortening over medium-high heat until golden. Place chicken in an ungreased 13 x 9 baking pan. Cover and bake at 350° for one hour, or until juices run clear.

AMISH BAKED FRIED CHICKEN
When I visited Amish country in Penn. I fell in love with the Fried Chicken they made. Here is one of their recipes. Very tasty!

Steps:
- Mix the beaten egg and milk together.
- Dip chicken parts in liquid.
- Stir together the salt,pepper and cracker crumbs.
- Dip chicken in dry mixture, using a spoon to cover well.
- Melt butter in a heavy cast iron skillet.
- Brown chicken well on both sides.
- Remove from stove top and place into the oven, cover with foil and bake at 325 degrees for 30 minutes.
- Uncover and continue baking for an aditional 30 minutes.
CHICKEN COATING
I like this recipe much better than the store-bought coating mixes. You can double or triple the recipe if you wish, and store the unused amount in a sealed container. The cook time is for baking the chicken.

- Measure all ingredients into bowl.
- Stir thoroughly.
- To use, moisten chicken parts with water and dip in coating.
- Or place coating in plastic bag, and shake to coat.
- Arrange chicken on ungreased baking tray.
- Bake 400 degrees for 40-45 minutes or until tender and juices run clear.
- Makes enough to coat about 3 1/2 pounds.
