HOLIDAY SPICED COFFEE
Steps:
- Add the ground coffee and pumpkin pie spice to the coffee filter of a drip coffee maker. Add 6 cups of water to the machine. Add the strips of orange zest to the empty carafe.
- Brew according to the manufacturer's instructions. The orange zest should stay in the carafe as the cups are filled.

- In a 3-qt. slow cooker, combine coffee, sugar, chocolate syrup and extract. Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Add to slow cooker. Cook, covered, on low 2-3 hours., Discard spice bag. If desired, serve coffee with cinnamon sticks.

Steps:
- Measure coffee and anise seeds into a filter-lined coffeemaker basket.
- Pour water into water compartment.
- Place pot on heating element; let water drip through basket into pot.
- Meanwhile, carefully cut ice cream from package and cut into 8 long pieces.
- Place ice cream into cups.
- Pour about 1/4 cup of coffee around ice cream.
- Serve immediately.

- In a mortar and pestle, or a resealable bag and rolling pin, crush anise pods and fennel and coriander seeds. Toast together in a skillet over medium-high until fragrant, about 1 minute. Divide between 2 quart-size glass jars, then divide vodka evenly between jars. Let cool completely. Screw lids onto jars, shake gently, and let stand in a cool, dark place 5 days.
- Strain vodka mixture through a fine-mesh sieve lined with cheesecloth; discard solids. In a small pot, boil sugar and 1 1/4 cups water just until sugar dissolves; add to strained vodka. Let cool completely, then refrigerate until cold, 1 hour. Divide among eight 8-ounce gift bottles. Bottles will keep in refrigerator up to 6 months. To serve, pour 1.5 ounces directly over ice, or add 1 part anisette and 3 parts cold water to a glass filled with ice.

When I make this next time, I'm going to try it without the fennel seeds and with a tablespoon of orange juice.
