THE BEST BANANA BREAD
We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

- Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
- Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
- Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

- Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
- Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
- In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
- Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
- Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
- Spread slices with honey or serve with ice cream.

- Remove odd pots and pans from oven.
- Preheat oven to 350º / 180º.
- Cream together butter and sugar.
- Add eggs and crushed bananas.
- Combine well.

Adapted from Dr. Cookie's Cookbook, I've been asked to bake this banana bread instead of birthday cake for two friends. If there's a banana or two left from a bunch that end up too soft, into the freezer they go! When we have enough frozen bananas and a rainy afternoon, the fruit is thawed and used in this recipe.

- Preheat oven to 350° F and grease two 9-inch loaf pans for bread OR.
- preheat oven to 400° F and line three 12-cup muffin pans with paper liners.
- Sift dry ingredients into a medium bowl; set aside.
- In large bowl, mix oil, honey, and eggs; stir in buttermilk, bananas, and vanilla. Add dry ingredients and mix just until combined.
- Fold in chocolate chips or walnuts and spoon batter into prepared pans or muffin cups.
- Bake two loaves at 350° F for 75 minutes or until a skewer inserted in the center comes out mostly dry.
- Bake 36 muffins at 400° F for 15-18 minutes.
- NOTES: when frozen, banana peels will turn black. After thawing, simply snip off one end of the fruit with kitchen shears and "squish" the banana right out into the bowl for mashing. The bread will be a darker color than if fresh ripe bananas are used.
- Do not use honey for children under the age of two.

I have been making this banana bread for years now.It comes from the Fanny Farmer Baking Book. I've tried others but none come close to this one. It is moist and flavorful. Wrapped tightly, it can be kept for a few days (If it lasts that long), and freezes well also. My kids like when I add about a half a cup of mini chocolate chips to this also.

- Preheat oven to 350 degrees.
- Grease and flour a 9X5 loaf pan.
- Stir together the flour, salt and baking soda.
- In a large bowl, mix the shortening, sugar, banana, eggs, and walnuts (and vanilla if using).
- Add the combined dry ingredients and stir just until the batter is thoroughly blended.
- Do not overbeat as that will make your bread tough.
- Pour into a prepared pan and bake for about 65 to 70 minutes or until a skewer inserted in the center of the bread comes out clean.
- You may have to cover the bread with foil at some point during the baking to prevent over browning.
- Remove from the oven and let cool for about five minutes in the pan, then turn out onto a rack to finish cooling.

JUST ANOTHER BANANA BREAD
Yes....here goes another banana bread recipe into the archives. I made this 2 nights ago and it is delicious! I made it into 3 loaves and 12 muffins. The original recipe asks for 2 cups chopped nuts as well, but since I am allergic, I omitted them. It is a recipe from one of of my many church cookbooks that I own and the credit goes to Victoria Lindsay. Thanks!
