APPLE PIE CHEESE BALL
This quick and simple cheese ball always goes over well when taken to parties. It's pretty and delicious too. And no cooking! Serve with apple wedges, gingersnaps, or graham crackers.

- Beat cream cheese and butter together in a bowl using an electric mixer until smooth and creamy; add 1/4 cup brown sugar, confectioners' sugar, apple pie spice, 1/2 teaspoon cinnamon, and vanilla extract and beat until smooth. Transfer cheese mixture to a piece of plastic wrap. Wrap plastic wrap around cheese, forming a ball; refrigerate until set, at least 2 hours.
- Mix pecans, 2 tablespoons brown sugar, and 1/4 teaspoon cinnamon together on a shallow plate. Unwrap cheese ball and roll in the pecan mixture until evenly coated, pressing to help topping stick to cheese ball.

- Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add onion and celery; cook and stir 4-6 minutes or just until tender., In a large bowl, mix eggs, parsley, salt, thyme and pepper. Stir in bread crumbs, apples and the onion mixture. Shape into 2-in. balls. Place in a foil-lined 15x10x1-in. baking pan. Bake 30-35 minutes or until golden brown.

- Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
- Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.

- Blitz 30g of the oats with the dates, ground almonds, almond butter, cinnamon, dried apple slices and a pinch of salt until roughly chopped and beginning to clump together. Grate in the apple, skin and all, then add the remaining oats and pulse until combined.
