Apple Cider Pulled Pork image

Steps:

  • Mix first 5 ingredients. Place apples, onion, celery and cider in a 5-qt. slow cooker; top with roast. Sprinkle roast with seasoning mixture. Cook, covered, on low until tender, 6-8 hours., Remove roast; shred with 2 forks. Skim fat from cooking juices. Mix cornstarch and water; stir into cooking juices. Cook, covered, on high until thickened, 10-15 minutes; stir in pork. Serve on buns. If desired, top with apple slices. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

Apple Cider Pork Pot Roast image

Steps:

  • Preheat the oven to 325°F (165°C).
  • Season the pork with the salt and pepper.
  • Heat the oil in a large Dutch oven over medium-high heat. Once the oil is hot, add the pork and brown well on all sides, 3 to 4 minutes per side.
  • Remove the pork and add the onion wedges to the pot. Cook for a few minutes, letting them get a little color but being careful not to let them burn.
  • Return the pork to the pot, placing it on the bed of onions. Add the cider and 1 cup (235 ml) water and bring to a simmer, then wedge the apple pieces under the meat among the onions. Toss in the thyme.
  • Cover and transfer to the oven. Cook for 3 hours, or until the meat is fork-tender, shreds easily, and is a deep brown color; the apples will have caramelized.

1 (5-pound; 2.3 kg) boneless pork shoulder (6 pounds; 2.7 kg if bone-in)

Cider-Braised Pork Shoulder with Caramelized Onions image

Steps:

  • Preheat oven to 325°F.
  • Score fat and any skin on pork in a crosshatch pattern. Make slits all over meat with a small sharp knife and insert a garlic sliver in each slit. Pat pork dry and season with salt and pepper.
  • Heat oil in a 4- to 5-quart ovenproof heavy pot over moderately high heat until hot but not smoking, then brown meat on all sides, turning occasionally with the aid of tongs and a carving fork, about 8 minutes. Transfer pork to a plate.
  • Add onions to pot and sauté over moderately high heat, stirring occasionally, until softened and starting to turn golden, about 5 minutes. Add 3/4 teaspoon salt and sauté, stirring occasionally, until onions are golden and caramelized, 8 to 10 minutes more.
  • Stir in cider and return pork to pot.
  • Cover pot with a tight-fitting lid and braise pork in middle of oven until very tender, 2 1/2 to 3 hours.
  • Transfer pork to a serving dish with the aid of tongs and carving fork. Boil cooking juices with onions until mixture is reduced to about 2 cups, 2 to 3 minutes, then season with salt and pepper and serve with pork.

  • In a small bowl, mix the salt, pepper, paprika and mustard. Using pieces of cotton kitchen twine, truss the pork along it's length, leaving about 2” between each section. Spread the rub over the pork evenly, coating all sides.
  • Spread the onions over the bottom of the slow cooker, top the onions with the thyme and garlic, then pour the apple cider and apple cider vinegar over the onions. Nestle the seasoned pork shoulder on top of the onions. Cover and cook on low for 8 hours.
  • Using scissors, cut the kitchen twine and gently remove it from the pork. Using two forks, gently shred the pork directly in the pot into large chunks. With tongs, toss the pork with the onions and the sauce.
  • Alternatively, remove the pork from the crock pot with tongs and set aside. Strain the liquid into a sauce pot and bring to a boil over high heat. Reduce heat to low and simmer until the sauce is reduced by half. While the sauce is reducing, shred the pork and return it to the crock pot with the cooked onions. Pour the reduced sauce over the onions and pork, and toss to combine.
