FRESH APPLE CAKE

This easy apple cake gets covered with a sweet cream cheese frosting and chopped nuts.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease one 10 inch tube pan.
  • Beat together the oil, eggs, vanilla and sugar.
  • Sift together the flour, baking soda, salt, cinnamon and nutmeg. Add to egg mixture; stir in apples, nuts and raisins.
  • Pour into prepared pan and bake at 325 degrees F (165 degrees C) for 1 1/2 hrs or until a cake tester inserted in the center comes out clean. Cool and frost with cream cheese icing. Sprinkle top with 1/4 cup fine chopped nuts.

Steps:

  • Grease 9" springform pan.
  • Preheat oven to 350 deg. F.
  • Cream butter with sugar, then add cream cheese and beat until smooth and creamy. Stir in eggs and vanilla.
  • In small bowl, mix flour bakng powder and salt.
  • Peel and slice apples.
  • In small bowl, mix 1/4 cup sugar with cinnamon.
  • Beat flour mixture into cream cheese mixture.
  • Add cinnamon mixture to apples and stir until coated.
  • Stir apples into batter.
  • Pour all ingredients into greased pan and bake 1 hour.

  • Peel, deseed and cut the apples into eighths. Pour the lemon juice over the apples and sprinkle with a little caster sugar so that they do not darken.
  • Heat the oven to 190C/fan 170C/gas 5. Beat the eggs with the remaining caster sugar in a mixer until you have a thick, pale, mousse-like mixture. Sift over the flour and baking powder, and fold it in followed by the soured cream, rum and butter.
  • Butter the inside of a 23cm springform tin and arrange the apples on the base. Spoon the batter on top and level it with a spatula. Put the cake in the oven and bake for 50 minutes-1 hour without opening the door. Cool the cake and then turn it out onto a plate, and sprinkle it with icing sugar to finish.

  • In a large bowl, cream butter and 1 cup sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition. In a small bowl, combine the nuts, cinnamon and remaining sugar., Spread half of the batter in a well-greased 10-in. tube pan with a removable bottom.
