APPLE-BUTTERMILK PANCAKES
These pancakes are great with syrup, sliced bananas, a smear of almond butter, or a dollop of part-skim ricotta.

- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together buttermilk, applesauce, egg, and butter. Add applesauce mixture to flour mixture and whisk until just moistened (batter should have some lumps; do not overmix).
- Lightly coat a large nonstick skillet or griddle with cooking spray and heat over medium-high. In batches, drop batter by 1/4 cupfuls into skillet. Sprinkle each pancake with diced apple. Cook until bubbles appear on top and a few have burst, 2 to 5 minutes. Flip pancakes and cook until golden brown on underside, 2 to 5 minutes. Repeat with more cooking spray and remaining batter, wiping skillet clean between batches.

- In a medium bowl, mix together the flour, 1/4 cup sugar, the cinnamon, salt, baking powder and baking soda. Add the sparkling water, buttermilk and vanilla, and stir until the mixture forms a batter. Let rest for 15 minutes.
- In a small bowl, whisk together the remaining 1/2 cup sugar and the lemon zest.
- In a heavy 4 to 5-quart saucepan, heat the olive oil and vegetable oil over medium heat until a deep-fry thermometer registers 375 degrees F. (If you don't have a thermometer, a cube of bread should brown in about 3 minutes.)
- Meanwhile, peel and core the apples, then cut into 1/2-inch-thick slices. Using paper towels, blot the apple slices dry.
- Add the apple slices to the batter and toss until coated. Working in batches, fry the apples, turning occasionally, until golden brown, 2 to 3 minutes per batch. Drain on paper towels and sprinkle with the lemon sugar while still warm. Serve immediately.

- Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
- Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!
BUTTERMILK PANCAKES

- Make the topping. Peel, core and quarter the apples, then slice each quarter into four. Heat the butter in a large frying pan. Cook the apples until golden, but still firm. Stir in the pecans and maple syrup. Heat gently for 2-3 minutes. Remove from the heat and keep warm.
- For the pancakes, sift the flour, baking powder, bicarbonate of soda, sugar and a pinch of salt into a bowl. Whisk the egg whites until stiff. Mix together the egg yolks, buttermilk and melted butter and whisk into the flour mixture until the batter is thick and smooth. Carefully fold the egg whites into the batter until evenly mixed.
- Heat a large frying pan, preferably non-stick, and brush lightly with melted butter. Drop 2 or 3 large spoonfuls of batter into the pan to make pancakes about 10cm in diameter. When the surface has dulled slightly and bubbles appear, after about 3-4 minutes, carefully flip the pancakes over and cook on the other side until browned.
- To serve, place a spoonful of the apple mixture on a pancake, top with a second pancake and spoon over more of the topping. Repeat to make three more pancake stacks.

- In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the egg, milk, butter, orange juice, zest and vanilla. Add to dry ingredients just until moistened. Fold in apples., In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop batter by rounded tablespoons into oil. Fry until golden brown on both sides. Drain on paper towels. Dust with confectioners' sugar. Serve warm.

- In a large bowl, combine dry ingredients: flour, baking powder, cinnamon, and salt. Add milk, maple syrup, and melted coconut oil and stir just until combined. Gently fold in chopped apples. Batter should be thick (like in the photo above) but if it is too thick to stir, just add a splash more milk.
- Place a large non-stick pan over medium heat and add enough oil to lightly coat the bottom of the pan. When oil is melted and pan is hot, pour batter by the 1/4 cupfuls into the pan. If necessary, use your spatula or a spoon to gently spread dough into a round pancake, so it cooks evenly. Cook about 1-2 minutes per side. Turn down the heat and cover the pan with a lid, if pancakes are browning too fast or not cooking in the middle.
- Remove when lightly browned and center is cooked. Continue to cook in batches until all the batter is used up, adding more oil to the pan when needed.
- If desired, top pancakes with a dusting of powdered sugar or maple syrup. Makes 10-12 pancakes
