FAMILY FAVORITE APPLE CRISP
A family favorite. The house smells great when it's cooking! Serve warm. Vanilla ice cream is a great accompaniment.

- Preheat oven to 375 degrees F (190 degrees C). Butter a 9x13-inch baking dish.
- Spread apple slices into prepared baking pan. Dot with 1 tablespoon butter pieces and sprinkle with lemon juice. Mix flour, rolled oats, brown sugar, cinnamon, and salt together in a bowl. Cut butter into oat mixture until the mixture resembles coarse crumbs; spread over apples.
- Bake in the preheated oven until topping is browned and apples are soft and tender, about 30 minutes.

Just a little something I whipped up on the spur of the moment. I was thinking of the 2 things I liked together and this is what I came up with. Hope you like it as much as my friends and neighbors at the church potluck! Enjoy!

- 1. Preheat oven to 425^. Apple Part: In a large bowl combine the apples, cinnamon,nutmeg, flour and brown sugar. Stir to coat all pieces. Pour into buttered 9x13-inch baking dish. Bake in oven for 10 minutes. Turn oven down to 350^ and bake for 40 minutes,covered lightly with foil. Remove from oven and remove foil also,pour lemon layer over all evenly and bake for 15 minutes, until it becomes firm but do not brown it. Sprinkle on topping and bake for 10 minutes more.After pie is done baking, place in refrigerator till cool. Serve with whipped cream . --- Lemon Layer: In a mixing bowl, combine the sweetened condensed milk, egg yolks and lemon juice. Mix on medium speed until well blended. Pour over hot apples evenly. Bake for 15 minutes until lemon part is firm.Do not brown lemon part. After the pie is done baking, sprinkle on topping and let bake for 10 minutes more. Remove from oven let cool and place in the fridge to become cold. --- Topping: Combine flour, sugar and salt, cut in butter and sprinkle on top. Bake for 10 minutes more.

- Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
- Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
- If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
- Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

- For the fruit filling:
- In a large mixing bowl, toss together the apples, lemon juice, sugar, and flour. Pour the apple mixture into a buttered 2-quart baking dish and set aside.
- For the topping:
- In a large mixing bowl, mix the flour, rolled oats, brown sugar, cinnamon, and salt. With a food processor, a pastry blender, or your fingers work the butter into the flour mixture just until it comes together and large clumps form. Fold nuts into mixture.
- Sprinkle the topping evenly over the fruit. Bake the apple crisp until the fruit is bubbling and the topping is golden brown and crisp, about 45 minutes.
- Serve the crisps warm with vanilla bean ice cream or fresh whipped cream, if desired.
APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.
