APPLE ORCHARD SNACK CAKE
This is an unusual cake that has no flour, the Graham Crackers replace it. This would be great for an afternoon snack for kids and so good for the grown-up kids with a cup of coffee. The recipe is from Christy Jordan on Southern Plate

- Pre-Heat oven to 350 - Grease an 8 x 8 pan - Blend sugar , Margarine, and eggs in a bowl with a spoon, Stir in the Graham Cracker Crumbs, Apples and Walnuts, untill well Blended. Spread the Batter in the Pan. Bake for 40 to 45 minutes or till firm to the touch. Sprinkle liberally with Confectioners Sugar. Cool and cut into Squares.

Combine cinnamon and remaining sugar; sprinkle over top., Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

In another bowl, whisk flour, cinnamon, baking powder, baking soda and salt; gradually beat into egg mixture. Stir in apples and pecans., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pan on a wire rack.
