- Flatten steaks to 1/2-in. thickness. Cut into serving-sized pieces; set aside. Place flour in a shallow bowl. In another shallow bowl, combine eggs, milk, salt and pepper. Place bread crumbs in a third shallow bowl. Coat steaks with flour, then dip into egg mixture and coat with crumbs. , In a large skillet over medium-high heat, cook steaks in oil until meat reaches desired doneness (for medium-rare, a thermometer should read 135°, medium, 140°, medium-well, 145°), 2-3 minutes on each side.

MIDWEST SALISBURY STEAK
I was tired of boring, tasteless Salisbury steak recipes, so I created this one myself. Use good ground sirloin, and it'll tastes wonderful and you won't have any grease to drain from the patties once they've browned. Serve over mashed potatoes, egg noodles, or rice. Simply delightful!

- Mix ground sirloin, panko bread crumbs, egg, milk, and 1/2 packet onion soup mix, Worcestershire sauce, and black pepper together in a large bowl; shape into 5 patties.
- Heat a skillet over medium heat. Cook patties in hot skillet until browned, 3 to 5 minutes per side.
- Melt butter in a separate skillet over medium-high heat. Saute mushrooms and onion in melted butter until tender, 5 to 7 minutes. Stir flour and remaining dry onion soup mix into the mushroom mixture; cook and stir until flour is integrated fully, about 1 minute. Stream beef stock and water over the mushroom mixture while stirring continually; bring to a simmer, reduce heat to medium, and cook, stirring frequently, until the liquid thickens, about 5 minutes. Season with salt and pepper.
- Lie the browned steaks into the gravy; simmer until steaks are firm and gray in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

BREADED BAKED PORK CHOPS
This is a great, basic recipe for breaded baked pork chops. Feel free to experiment with different seasonings and breading. We just did a batch using honey-wheat bread crumbs which gave a slightly sweet taste that balanced our chosen Cajun seasoning.

- Preheat the oven to 350 degrees F (175 degrees C).
- Season pork chops with garlic powder and seasoning salt. Dredge chops in flour; shake off excess. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into bread crumbs to coat both sides. Place the breaded chops, unstacked, onto a plate.
- Heat oil in a skillet over medium-heat. Cook pork chops in hot oil until breading appears well browned, about 5 minutes per side. Transfer pork chops to a 9x13-inch baking dish and cover with aluminum foil.
- Bake in the preheated oven until pork chops are cooked through, 60 to 90 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Steps:
- Trim fat from steak and cut steak into smaller portions (should get about 5 or 6 small steaks) Salt and Pepper the steak as heavily as you prefer, and roll in the flour.
- Preheat Butter at Med High heat.
- Cook steak on one side until seared and brown, then flip steak and sear on other side for just about a minute to seal in the juices.
- Turn heat down to low and add water.
- Cover and cook at low heat for 1 to 1 1/2 hours.
- put meat on serving plate and mix gravy that is in the pan together and serve on mashed potatoes.
- Gravy should be thick enough but if desired add a little more flour to gravy and heat until gravy is as thick as desired.
- Quick note: I recommend using a non stick fry pan so as one reviewer mentioned you don't have trouble with the flour sticking to the pan.
ITALIAN BREADED STEAK UM
My mother-in-law used to make this while my hubby was growing up and it was passed onto me with a little tweaking. Serve this with a crisp salad, favorite pasta, along with some italian bread.

- Combine first 7 ingredients in medium sauce pan.
- Allow to simmer approximately 15 minutes on med-high heat, then reduce to low to keep warm.
- Slice roast into 1/8" slices.
- (Doing this when the roast is still half frozen is the easiest).
- Dip roast slices in egg, then in breadcrumbs seasoned with the Parmesan.
- Heat Olive Oil to 375 degrees in fry pan or deep fryer also works well.
- Fry roast slices approximately 3-4 minutes for each side until golden brown.
- Layer paper towel in serving dish along with fried slices of roast to provide proper drainage of olive oil.
- Serve roast slice with sauce on the side for dipping.

- In a shallow bowl, whisk the eggs and milk.
- In another shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, garlic, salt and pepper.
- Dip steak in egg mixture, then coat with the crumb mixture.
- In a large skillet, heat 1/2" of oil.
- Brown steak over medium-high heat for 2-3 minutes on each side or until meat reaches desired doneness (keep in mind that the longer it is cooked, the tougher it gets).
- Drain on paper towels.
- Transfer to a baking sheet.
- Top beef with tomato, then cheese slices.
- Broil 4" from the heat for 1-2 minutes or until cheese is melted.
- Serve with lemon wedges.

GRANDMA'S BREADED PORK STEAK
This recipe is a family favorite that was handed down by my grandmother. Pork steak is preferred to pork chops. They always come out crisp on the outside and melt in your mouth tender on the inside!

- 1. Whisk eggs and pour into pie plate or like container.
- 2. Crush crackers. (I do this by putting crackers into a ziplock bag and then use a rolling pin) Do not use food processor unless you do not like the texture of the cracker pieces. Then pour crackers into a separate container.
- 3. Season the pork steaks with salt and pepper. Dip in the egg and then dredge in the crackers, making sure they are coated well on each side.
- 4. Pre heat oven to 350 degrees. Add oil to a heated skillet and brown steaks on each side 2-3 minutes to crisp and brown the crackers. Put onto a baking sheet (Do not cover) Bake in oven 30-45 minutes (Depending on the thickness of the steaks.)
BREADED PORK TENDERLOIN
This is the most tender, tasty recipe for pork tenderloin.

- Slice tenderloin into 1/4 inch rounds. Place rounds between sheets of plastic wrap and pound until thin.
- Preheat oven to 325 degrees F (165 degrees C).
- Beat eggs and milk together and pour into a shallow dish or bowl. Set aside. In a separate dish or bowl combine breadcrumbs with garlic salt, oregano, salt and pepper. Mix all together. In a large skillet heat oil over medium high heat. Meanwhile, dip tenderloins in egg mixture, then coat with bread crumb mixture. When oil is hot, add coated tenderloin to skillet and fry until golden brown on both sides (not cooked through)!
- Place browned tenderloin in a 9x13 inch baking dish lined with aluminum foil. Fry any leftover eggs and bread crumbs together for 'breadings'. Add 'breadings' to baking dish. Cover tightly and bake in the preheated oven for about 45 minutes or until meat has reached an internal temperature of 145 degrees F (63 degrees C).
