BETTY MAYFIELD'S BEEF CASSEROLE

My sister and I used to request this recipe often. Mom never seemed to make it often enough... we loved it! I'm not sure where my Mom got the recipe, but I think Betty Mayfield was a past Miss America? Not sure!

Steps:

  • Brown ground beef; drain.
  • Add salt, sugar, tomatoes, tomato sauce, garlic and pepper.
  • In a mixing bowl, combine cooked egg noodles with sour cream, cream cheese and green onions.
  • In a greased 3-quart casserole dish, arrange meat mixture and noodle mixture in alternate layers.
  • Top with cheese.
  • Cover and bake at 350F for 35 minutes.
  • I serve this casserole with a fresh salad and hot garlic bread!
  • Enjoy!

Steps:

  • Saute onion in butter.
  • Add stew meat and brown slightly.
  • Put in 9x13-inch baking dish and add soy sauce, mushrooms, chestnuts, and pepper.
  • Cover and bake at 300 for 1 1/2 hours.
  • Serve over rice.

Mom's Tangy Beef Casserole image

Steps:

  • Start potatoes to boil for mashing.
  • Brown beef with peppers and steak sauce, add onions towards the end of the browning so they soften slightly.
  • Drain browned beef leaving enough of the juices for flavor and place in a medium casserole dish.
  • Add beans, soup and corn if desired and stir to mix well.
  • Spread mashed potatoes on top of mixture.
  • Bake covered in an oven preheated to 375 for 25 minutes.
  • Optionally remove covering and bake for an additional 10-15 minutes to brown the potato.

2 lbs lean ground beef
1 medium onion, chopped
2 cans green beans
1 can corn (optional)
2 cans condensed tomato soup
2 tablespoons steak sauce (I use A-1)
1 teaspoon seasoned pepper
1 dash crushed red pepper flakes
2 lbs potatoes, mashed

AUNT BETTY'S CREAMY TO DIE FOR BEEF CASSEROLE

My aunt Betty makes this amazing casserole. Though hard boiled eggs and chipped beef are hardly haute cuisine, I think you'll agree after trying this one that the flavor is outstanding. You have to mix this up and refrigerate it overnight before baking it to fully enhance the flavors. Do not add any salt--the beef and the soup are salty enough. You may want to rinse the beef before adding it to the casserole as it is quite salty. Add a green salad and "presto" dinner is ready. Prep time is minimal but you need to mix this up the day before you want to bake it.

Steps:

  • Put soup in a 2 quart casserole dish.
  • Stir until creamy.
  • Gradually add milk, stirring well.
  • Add cheese, macaroni, onion and beef; blend well.
  • Fold in sliced eggs.
  • Cover and store in the refrigerator at least 3 hours or overnight.
  • Stir briefly and bake uncovered at 325°F for one hour.
