APRICOT LEATHER

Since it's not sticky, this is a tasty, nutritious snack that's perfect to take along on whatever trail you travel. In pioneer days, fruit leather was made by thinly rolling fruit and drying it in the sun. -Patsy Faye Steenbock, Riverton, Wyoming

Steps:

  • Preheat oven to 160 degrees with rack in center. Place apricots in a large bowl, and cover with the water; let soak until they are completely soft, 30 to 45 minutes. Transfer to a fine sieve; drain, and reserve liquid.
  • Place apricots in the bowl of a food processor fitted with the metal blade; add honey and sugar. Process until mixture is very smooth and easily spreadable. If it is too thick, add up to 1 tablespoon soaking liquid.
  • Cover two 10-by-15-inch baking sheets with plastic wrap. Divide puree between the sheets; spread in a thin, even layer with an offset spatula. Let dry in oven until mixture is firm but slightly tacky, about 8 hours or overnight. Remove from oven; let cool.
  • Peel fruit leather from plastic wrap, and cut into 1-inch-wide strips using a pizza cutter. Roll tightly into cylinders, and serve.

2 cups dried apricots
3 cups boiling water
2 tablespoons honey
1/2 cup sugar

  • First cut the apricots in half and take out the pits. Then blend them smooth in a blender. Next add the honey and lemon juice and give it another spin in the blender.
  • Now prepare a tray with plastic wrap along the bottom covering it. I used my Mother’s drying racks that look like window screens. Next, pour the mix onto the plastic wrap and smooth out with a spatula. You want it to be about 1/8? thick.
  • To ensure that bugs don’t get stuck on my leather, I put another screen rack on top and taped them together. If you don’t have something like this, find something that would keep out the bugs, but allow air to come in and the sun to hit it.
  • Now take the trays outside on a table to dry out. I let them stay out for 24 hours. I could have done a few hours less for a more moist leather, but I like it firmer. Then take them inside and roll up the plastic wrap. Now you have delicious fruit leather that you can munch on all summer, or for the next week, it doesn’t last long.

  • Rinse apricots, cut in half and discard pits. Place on a large baking sheet cut-side-up and bake at 400˚F for 15 min (it's ok to crowd the fruit in a smaller pan). Remove from oven and let cool until just warm enough to handle.
  • Spread puree between 1/8" to 1/4" thick on a large parchment paper or plastic wrap covered baking sheet, extending the paper slightly past the rim. This recipe fills 3 large baking sheets. Set in the sunshine until no longer sticky when you poke the centers. It can fully dry out in 1 day if it's hot out or 2 days if warm and sunny (store indoors uncovered overnight).
  • Spread puree on a large cookie sheet lined with parchment paper and place baking sheets in a preheated oven at 200˚F for about 3 to 3 1/2 hours, depending on how thick you spread it. It's done when it no longer sticks to your fingers when you poke the center. Once at room temp, roll and store at room temperature in large ziploc or foodsaver bags.
