CLASSIC HASH BROWNS
These classic diner-style hash browns are crispy on the outside and fluffy on the inside.

Steps:
- Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
- Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
- Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

- 1. Preheat oven to 350.
- 2. Mix hashbrowns, cheese, sour cream, heavy whipping cream, butter and seasonings.
- 3. Bake in greased 9x13 pan for 1 hour. Garnish top of dish with paprika if desired.

ASIAGO DINNER ROLLS

- In a large bowl, mix sugar, yeast, garlic salt, Italian seasoning and 2 cups flour. In a small saucepan, heat milk, water and 2 tablespoons butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat 2 minutes longer. Stir in 1/2 cup cheese and enough remaining flour to form a soft dough (dough will be sticky). , Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 30 minutes. , Punch down dough. Turn onto a lightly floured surface; divide and shape into 18 balls. Roll each into a 12-in. rope; tie into a loose knot. Tuck ends under. Place 3 in. apart on greased baking sheets. Melt remaining butter; brush over rolls. Sprinkle with remaining cheese., Let rise in a warm place until almost doubled, about 15 minutes. Preheat oven to 375°., Bake 20-25 minutes or until golden brown, rotating pans halfway through baking. Remove from pans to wire racks; serve warm.

SAUSAGE STUFFED HASH BROWNS #5FIX
5-Ingredient Fix Contest Entry. This is one of the best and easiest recipes. When I first made up this recipe, I had to make 2 runs of these crunchy little mouthful of pleasure!! The great thing about this recipe is that you can add anything you like to the potato mixture. Hot pepper, onions, and cheese is great mixed with the potatoes, then deep fried. I live in the south and everything is better deep fried!

- Fill a large pot with 3 inches of oil. Heat oil to 325 degrees.
- In a large bowl, combine potatoes, eggs and flour. Stir to combine well. Put a golf ball amount of potato mixture in the palm of your hand. Take one sausage and carefully form the potato mixture around the sausage.
- Carefully drop the potato ball in the hot grease. Don't cook no more than 4-5 at a time. Cook for 2-3 minutes or until golden brown.
- Remove with a slotted spoon and place on a paper towel. Repeat until all potato mixture is used.
- Served immediately with your favorite dipping sauce. Be careful, the potatoes will be hot.
- Makes 15.

STEAKHOUSE SIRLOIN WITH GOLDEN HASH BROWNS & MUSHROOMS #5FIX
5-Ingredient Fix Contest Entry. This recipe is my take on my steakhouse favorites which include steak, mushrooms, and wonderful Hash Browned potatoes cooked and presented as a wonderful one dish meal!

- For the steak: If using a grill, preheat to very hot. If using a skillet, spray with cooking spray and preheat to very hot, but not smoking.
- Melt 4 Tbs. of the Butter in an 8 " skillet over medium high heat . Sprinkle with ½ teaspoons seasoned salt.
- Add mushrooms and sauté for about 5 minutes until mushrooms are tender. Remove from skillet with a slotted spoon, cover with aluminum foil and set aside to keep warm.
- Add remaining butter to the skillet used to cook the mushrooms. Sprinkle with ½ teaspoons of the seasoned salt.
- Blot the Hash Browns with paper towels pressing out most of the liquid. Place hash browns in the skillet and press down firmly with your fingers or a wooden spoon until compressed into the skillet. Sprinkle with another ½ teaspoons seasoned salt. Cover the skillet and cook for 15 minutes over high to medium high heat until very golden brown on the bottom. Do not stir or turn with a spatula while potatoes are cooking. After 15 minutes, lift up edge of the potatoes to see if they are crispy. If not, cook another 5 minutes.
- While potatoes are cooking, blot steaks with a paper towel, then rub remaining seasoned salt on both sides. Cook on very hot grill or in hot skillet for 2 ½ minutes per side for medium rare. Turn only once so steak gets a nice sear. Remove steak from heat and let rest 5-7 minutes before slicing into ½" wide slices.
- To assemble: Invert a serving platter over the potatoes and flip so the Hash Browns are in a circle in the middle of the platter. Pour mushrooms on top and in the center of the potatoes. Arrange steak slices around the outside of the potatoes.

ROASTED HASH BROWNS WITH CHEESY AVOCADO EGG CUPS #5FIX
5-Ingredient Fix Contest Entry. This is a fun and easy brunch recipe. I have made it using various varieties of Simply Potatoes and they have all turned out excellent. When all our family can be together we especially enjoy sharing a brunch meal together. The combination of the oven roasted potatoes, the baked avocado and eggs with a sprinkling of pepper jack cheese adds a flavorful Mexican twist to this fun brunch meal. I always offer small bowls of salsa, sour cream and fresh cilantro as garnishes. I hope you enjoy it as much as we do.

- Preheat oven to 425 degrees. Pour 1 TBSP olive oil into an 9 inch round pan.
- Place the Simply Potatoes hash browns into the pan; drizzle the remaining 2 TBSP oil over the potatoes.
- Bake for 20 minutes. Remove from oven, Using the back of a large spoon, make 6 wells into the potatoes. Place the avocado halves, cut side up, on top of the potatoes.
- Break an egg into the indented area where the avocado pits were. Sprinkle with pepper jack cheese.
- Return the pan to the oven and bake for an additional 15 minutes, or until the egg is set.
- Remove from the oven.
- To serve: Scoop out a portion of the roasted potatoes and avocado baked egg onto 8 serving dishes. If desired offer small bowls of salsa and sour cream to accompany the dish.

- Mix the potatoes and cheese.
- Heat a thin layer of oil in large oil or on griddle, to medium heat.
- Spread potato mixture in small circles (about 2 tablespoons per circle, spreading to about 2 inches round), in skillet, and place two shrimp in a single layer in center of each.
- Spread another 2 tablespoons potato mixture on top of each. Cook until golden and crispy on bottom, then turn and cook until golden and crisp on second side, and shrimp is just cooked through.
- Transfer to drain; keep warm. Repeat until all are cooked (should have 16 rounds).
- Serve 4 per person, with pesto.
