CHEDDAR-SHRIMP NACHOS
They're already fans of cheddar-cheesy nachos. But, as it does with every other dish, the added shrimp gives these nachos a serious deliciousness upgrade.

Steps:
- Heat large cast iron skillet on high heat until very hot and starts to smoke. Add 1 Tbsp. dressing, shrimp, red peppers and seasoning; cook and stir 1 to 2 min. or until shrimp is heated through and evenly coated with dressing mixture. Stir in remaining dressing.
- Cover large microwaveable plate with layers of half each of the chips, shrimp mixture and cheese. Repeat layers.
- Microwave on HIGH 1 to 2 min. or until cheese is melted, rotating plate after each minute. Top with onions, cilantro and jalapenos.

- In a large bowl, combine the shrimp, cheese, chilies, onions and olives. Combine the mayonnaise and cumin; add to shrimp mixture and toss to coat. , Drop by tablespoonfuls into tortilla scoops. Place on ungreased baking sheets. Bake at 350° for 5-10 minutes or until cheese is melted. Serve warm.

- Heat oven to 450°F.
- Spread won ton wrapper pieces evenly onto 2 rimmed baking sheets sprayed with cooking spray. Bake 5 to 7 min. or until crisp and lightly browned. Cool.
- Meanwhile, combine chicken, coleslaw blend, onions and 2 Tbsp. dressing.
- Spread half the won ton wrapper pieces onto ovenproof plate; sprinkle with half the cheese. Repeat layers.
- Bake 2 to 4 min. or until cheese is melted.
- Top with chicken mixture; drizzle with remaining dressing.

Steps:
- Fill frying vessel with enough oil to cover 2 inches.
- Cut Wonton Wrappers in half to make an easier-to-eat size chip.
- Fry Wonton Wrappers on medium about 40 seconds each flipping half way though until golden brown.
- Set on paper towels and immediately salt. Move to serving dish and top with coleslaw mixture.
- Cut each shrimp into 3 pieces and toss in the corn starch to dredge. This will give you a light crunchy texture.
- Fry shrimp in batches on medium high about 2 minutes for each batch stirring with spider or slotted spoon to prevent clumping.
- Toss shrimp in sweet chilli sauce and assemble a spoonful atop each Wonton chip.
- Drizzle with yum yum sauce and serve.
