Asian Quinoa Meatballs image

Steps:

  • 1. Preheat oven to 400 degrees. Lightly oil a 9x13 baking dish. Combine first nine ingredients together using a wooden spoon. Roll the mixture into 1-1.5 inch meatballs. Place meatballs onto prepared dish and bake for 20-22 minutes, or until all sides are browned and meatballs are cooked through.
  • 2. To make the sauce: whisk together the remaining 7 ingredients with 1/2 cup water in a small saucepan over med high heat.
  • 3. In a small bowl, whisk together cornstarch and 1 Tablespoon water. Stir into soy sauce mixture until thickened, about 2 minutes. Serve immediately with sauce, garnished with green onion and sesame seeds.

1 lb ground turkey
3/4 c cooked quinoa
3 clove garlic, minced
2 green onions, thinly sliced
1 large egg
1 Tbsp soy sauce
2 tsp sesame oil
1/2 tsp sriracha sauce
salt and pepper to taste
sesame seeds for garnish
1/4 c soy sauce
2 Tbsp rice vinegar
1 Tbsp fresh grated ginger
1 Tbsp packed brown sugar
1 tsp sesame oil
1/2 tsp sriracha sauce
2 Tbsp chili sauce
2 tsp corn starch

Steps:

  • In a small skillet, saute onions in butter until tender. Transfer to a large bowl. Add the egg, soy sauce, bread crumbs, water chestnuts, garlic and ginger. Crumble sausage over mixture and mix well., Shape into 1-in. balls. Place on an ungreased broiler pan. Bake at 350° for 15-20 minutes or until a thermometer reads 160°; drain. Sprinkle with sesame seeds., Combine the mayonnaise, rice vinegar, and wasabi; serve with meatballs.

  • Preheat oven to 400°F. Cover a baking sheet with foil, lightly coat with nonstick spray or vegetable oil.
  • In a large bowl combine all meatball ingredients. Roll mixture into 2-inch balls, about 12 total. Transfer to the greased baking sheet, spreading them out equally on the pan.
  • Bake in the center of the oven for 15 minutes, then flip each meatball and cook for another 3 to 5 minutes. The sides should be lightly browned and cooked all the way through.
  • In a medium-sized saucepan with a lid, add all sauce ingredients except for the cornstarch and water mixture. Set the heat to medium-high, whisk the ingredients together and allow it to come to just a boil.
