SPRING HASH BROWN QUICHE WITH ASPARAGUS AND GOAT CHEESE

Steps:
- Preheat oven to 425 degrees. Spray deep dish pie plate generously with Pam or any other non-stick cooking spray.
- Toss Simply Potatoes® Shredded Hash Browns with the melted butter, 1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper.
- Press buttered potatoes onto the bottom and up the sides of the pie plate.
- Bake in the preheated 425 degree oven for 30 minutes.
- Remove from oven, reduce heat to 350 degrees.
- Top Simply Potatoes® Shredded Hash Browns with spinach.
- Top potatoes and spinach with sun-dried tomatoes.
- Beat the eggs with the half and half and remaining salt and pepper.
- Pour over potatoes, spinach and sun-dried tomatoes.
- Arrange asparagus over egg mixture, sprinkle with the green onions and then scatter the goat cheese over the entire dish.
- Bake for 40 minutes in a 350 degree oven, or until the center is set.
- Allow to cool for 10 minutes before cutting.
- Enjoy!

- Preheat oven to 425 degrees F (220 degrees C).
- Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown.
- In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture.
- Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown.

- Heat olive oil in a skillet over medium heat; cook and stir asparagus until slightly tender, 5 to 10 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Press pie pastry into a 10-inch deep-dish pie pan.
- Combine asparagus, eggs, milk, half-and-half, French-fried onions, Swiss cheese, Cheddar cheese, and green onion in a bowl. Pour into prepared pie pastry.
- Bake in the preheated oven until center of quiche is set and a knife inserted in the middle comes out clean, about 45 minutes. Allow to stand for 10 minutes before serving.

- Using the largest holes on a box grater, shred potatoes. Place in a large bowl and toss with 1 tsp. salt and 1/2 tsp. pepper. Transfer potatoes to a clean dish towel, gather together the ends of towel and thoroughly wring out excess liquid over the sink. Transfer potatoes to a bowl and set aside.
- Heat oil and 2 Tbsp. butter in a 10" (top diameter) cast-iron skillet over medium-high until butter is melted. Add potatoes and immediately start forming into a crust by pushing potatoes flat against bottom and sides of pan with a 1/2-cup dry measuring cup. Continue cooking, pressing potatoes up sides of pan if they start shrinking, until potatoes are bound together and the bottom of the crust is starting to brown, about 10 minutes.
