SCOTCH BARS

This was one of my mom's recipes, and one of the most popular dessert/cookie/snacks she made. It's ultra-simple and just about impossible to mess up unless you just flat-out burn it to a crisp.

CHOCOLATE-CHEWY SCOTCH BARS

This recipe is from the 1973 Pillsbury Family Cookbook. Even though I've had this cookbook since the 70's, this is the first time I've made this recipe. Chocolatey, chewy, buttery, and sweet enough to make your teeth revolve - if that sounds like something you'd like, then these are for you. Oh, and easy, too!

  • Preheat the oven to 350 degrees. Line a 9X13-inch baking pan with aluminum foil, letting the foil hang over the each short edge by one or two inches. Lightly grease the foil with cooking spray.
  • Whisk together the flour, oats, baking soda, and salt and then set aside. Place the 3/4 cup butterscotch chips in a large bowl. Pour the hot melted butter over the butterscotch chips and whisk together until the chips are melted and smooth. Add the brown sugar and whisk until combined. Add in the egg and vanilla. Whisk until smooth. Stir in the flour mixture, just until incorporated.

  • While the bars bake, place the 1/4 cup butterscotch chips, brown sugar, water and salt in a small microwave-safe bowl. Microwave the mixture until melted and smooth, this was about 2 minutes on 50% power. Whisk to combine well.

9 SCOTCH COCKTAILS EVERYONE SHOULD KNOW | EPICURIOUS

From epicurious.com
  • Rob Roy. The OG sets the standard all scotch cocktails have to live up to. This boozy manhattan riff keeps the Scotch whisky front and center, simply being what it is, and doesn’t let itself get in the way by getting too clever.
  • Bobby Burns. This drink sees the Rob Roy and raises the ante. Once an obscure darling of the cocktail revival, the Bobby Burns has returned to the scene along with its purposeful complication.
  • Cowboy Killer. In this smoky scotch drink, the criminally neglected Rob Roy meets the Red Hook. The Cowboy Killer was the brainchild of Philadelphia bartender Colin Shearn at the original Franklin Mortgage and Investment Company.
  • That'll Take the Edge Off. Inventors John McCarthy and Carey Jones reference the almighty Sazerac as the inspiration for this cocktail, but to me, it seems to fall closer to a Rob Roy riff.
  • Scotchy Boulevardiers for a Crowd. There is no more time-honored tradition in bartending than taking a classic and putting a spin on it. The boulevardier is a whiskey-based precursor to the negroni, and this multi-serving version lets the American whiskey and scotch party together in the glass, a fun way to have the best of two worlds at once.
