GERMAN NOODLE BAKE
This is a recipe I serve each year for my holiday open house because everyone looks for it. Store-bought noodles can be substituted, but I prefer homemade noodles...and so does everyone else. -Kathleen Meineke, Cologne, New Jersey

Steps:
- In a small bowl, combine flour and salt. Make a well in center; add eggs. Stir together, forming a dough. , Turn dough onto a floured surface; knead 5-6 minutes. Divide dough in half. Roll each portion into a 12x9-in. rectangle. Dust both sides of dough with flour; roll up, jelly-roll style. Cut into 1/4-in. slices. Unroll noodles on paper towels; let dry for up to 2 hours., Preheat oven to 350°. In a Dutch oven, bring water to a rapid boil. Add noodles; cook 7-9 minutes or until tender., Meanwhile, in a small saucepan, melt butter. Stir in flour, salt and paprika until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Stir in eggs., Drain noodles; transfer to a greased 11x7-in. baking dish. Top with cheese sauce. Cover and bake 20 minutes. Uncover; bake 10-15 minutes longer or until bubbly., ,

Steps:
- Preheat oven to 450 degrees Fahrenheit.
- Lightly beat eggs with salt.
- Gradually add flour and milk, blending until smooth.
- Add sugar to mixture.
- Pour melted butter into two 8" square pans.
- Add half of batter to each pan.
- Bake for 15 minutes until pancakes rise, puff, and are golden.
- Lower temperature to 400 degrees Fahrenheit if pancakes are browning too fast.
- Sprinkle with powdered sugar and serve immediately.

My daughter in law gave me this recipe and it is WONDERFUL. Almost a cross between a frittata and scalloped potatoes.

- Mix potatoes, onion, cheeses, and spinach in casserole dish.
- Poke holes in mixture.
- Pour egg/sour cream mixture over it and top with grated cheese.
- Season to taste with salt, pepper, garlic salt and nutmeg.
- Bake at 350-375 until top is browned.

- Preheat oven to 350°F. Cut 6 or 7 slices of cheese. Cube remaining cheese. I In a 4-quart casserole layer, 1/2 noodles, all of the sausage, tomato, and cheese cubes. Layer remaining noodles and cheese slices on top. Combine eggs, sour cream, salt and pepper. Pour slowly over noodles, allowing it to seep between the ingredients. Cover and bake for 60 minutes or until cheese is golden brown.
BAKED AUSTRIAN RICE PUDDING ("REISAUFLAUF")
One of my childhooddays favourites! And I still do like this very fragrant, aromatic sweet pie/tarte like dish. Use apples (you might want to add more sugar then) instead of bananas, mangos or raisins. Serve lukewarm with vanilla sauce as main dish or as dessert.

Steps:
- Slice vanilla bean in half lengthwise and scrape out seeds.
- Bring milk and if using cream to a boil and add rice and vanilla seeds.
- Reduce heat, cover pot and let rice steam until soft (about 20minutes).
- Separate eggs and beat egg whites with a dash of salt until firm.
- Mix butter, sugar until creamy.
- Add egg yolks, cinnamon and lemon zest. Mix again.
- Cut bananas in 5mm slices/rounds.
- Add rice and mix until "batter" is homogeneous.
- Incorporate beaten egg whites slowly.
- Butter a casserole or a cake pan and pour in half of the rice batter. Spread mixture evenly.
- Cover rice batter with banana slices and cover with the other half of rice batter. Spread evenly.
- Sprinkle with 3 tablespoons brown sugar.
- Let bake at 175°C for about 25-30 minutes until a golden brown crust has formed.
- Enjoy!
BAKED SIMPLE GERMAN PANCAKE (AUFLAUFEN)
This simple, but delicious pancake is my version of one they make at Elmers Restaurant chain. They serve it with powdered sugar and lemon wedges. I like a little pure maple syrup on mine or possibly some sauted apples.

Steps:
- Mix milk and flour; add beaten eggs, a pinch of salt, and vanilla.
- Pour batter into sprayed or well buttered 9"x13" pyrex dish (or something comparable).
- Sprinkle with nutmeg.
- Bake in preheated 425 degree F oven for 15-20 minutes depending on altitude. (I have to bake mine for 20 minutes at 3500 ft.).
- Serve with powdered sugar, lemon wedges, sauted apples, or of course, good ole pure maple syrup. Yum, yum and not too unhealthy.

This came from a old cookbook I found. This time of year makes you want to bake with apples and these old recipes are wonderful and I love to share them. It is way too sad that they get lost and forgotten. Enjoy!

Steps:
- 1. Butter casserole dish and sprinkle with brown sugar.
- 2. Fill about 1/3 full with peeled chopped apples. Bake 350 degrees until partially soft.
- 3. Beat egg yolks and sugar: then add water. Add sifted flour and baking powder. Add vanilla and nuts, mix.
- 4. Fold in stiffly beaten egg whites.
- 5. Pour over apples and bake about 30 minutes at 325. Serve hot.
