NAN'S CRANBERRY SAUCE

Nans Cranberry Sauce is a staple on Ree's Thanksgiving table.

Steps:

  • Bring 2 cups of water to a boil, then remove from the heat. Stir in the gelatin until completely dissolved, 1 to 2 minutes. Add 1 cup cold water, the cranberry sauce and pineapple. Mix well, ensuring you break apart any large chunks of the cranberry sauce. Pour into a 9-by-13-inch pan. Cover and place in the refrigerator until firm, 3 1/2 to 4 hours.
  • Beat together the cream cheese and powdered sugar with a hand mixer until smooth, about 1 minute. Add the milk and mix until completely combined. The frosting should be thick but still pourable. Carefully spread the cream cheese frosting in a thin layer over the cranberry sauce. Zest the orange directly over the frosting. Serve up in individual squares.

Steps:

  • To make the pudding: Preheat oven to 325 degrees.
  • In a medium bowl, cream butter and sugar; add evaporated milk and water.
  • Using a spoon, stir in flour, salt, baking soda, and cranberries.
  • Line 8 sections of muffin pan with paper liners. Spoon batter into muffin pan (it will thick).
  • Bake at 325 degrees for 30 minutes.
  • To make the butter sauce: Put butter, sugar, evaporated milk, and water in a medium sized sauce pan.
  • Bring to a boil, stirring constantly, about 2 minutes.
  • Remove pan from heat.
  • Add vanilla.
  • Pour warm sauce over warm muffins.

Cranberry-Orange and Almond Pudding image

Steps:

  • Preheat the oven to 325 degrees F.
  • Melt 1/2 stick butter in a wide saucepan, then add the cranberries and sugar. Cook over a fairly high heat until the fruit begins to pop. This will take hardly anytime if the cranberries are fresh, and about 10 minutes if they're frozen. Remove the pan from the heat.
  • Combine the flour, baking powder, soda and sugar in a large bowl and add the eggs, melted butter and orange oil. Mix until smooth. Pour half of the batter into a 2-pint round pie dish. Cover with the cranberries, then top with the remaining batter; don't worry if the cranberries are not covered completely.
  • Sprinkle flaked almonds and turbinado sugar over and bake for 45 minutes to 1 hour, until the top is golden brown and set.

Steamed Cranberry Pudding has been in my file for more than 30 years. It was passed on by a fellow teacher who was retiring. Her family had long enjoyed it, using their own homemade sorghum molasses as a special ingredient. Chuck and I now live in a log home in a wooded area. We're visited regularly by armadillos, raccoons, wild pigs, deer, bobcats and other creatures. We enjoy watching them-but they make it difficult to establish a compost pile!

  • In a bowl, combine pudding ingredients. Pour into a well-greased 4-cup pudding mold. Place in a stockpot on a rack. Fill stockpot with boiling water to 1-in. depth; cover and boil gently. Steps:

  • Set oven rack in the middle position; preheat oven to 350°.
  • Coat a 13 x 9 inch ovenproof glass baking dish with vegetable spray.
  • Cook noodles in a large pot of boiling water for 7-10 minutes, or until just tender.
  • Drain noodles and rinse under cold water.
  • Place noodles in a big bowl.
  • Add in melted butter, 1/4 cup sugar, and 1 teaspoon cinnamon.
  • Whisk eggs with pineapple juice to blend, add to noodles, and stir to combine; set aside.
  • Mix the remaining 1 teaspoon cinnamon with remaining 1/4 cup sugar and toss with apples in another bowl.
  • Spread half of the noodles in prepared baking dish; add all of the apples in an even layer.
  • Spread cranberry sauce over the apples.
  • Sprinkle evenly with walnuts.
  • Layer remaining noodles on top.
  • Topping: toss melted butter with walnuts to coat and scatter over top of pudding.
  • Sprinkle with brown sugar.
  • Bake 35 to 45 minutes, or until pudding is bubbling and top is golden brown.
  • Serve warm or at room temperature.

Nanny's Steamed Cranberry Pudding image

Steps:

  • In a large bowl, mix together 2 cups flour, baking soda, 1 cup of white sugar, cinnamon, and nutmeg. Stir in the milk, egg, and butter until well blended. Toss the cranberries in the remaining 1/4 cup of flour to coat, then fold them into the batter.
  • Pour the batter into a greased round casserole dish with a lid, place the lid on, and then cover again with aluminum foil. Place the dish into a large roaster or stock pot, and fill with 3 to 4 inches of water. Place the lid on the outer pot, and cover with aluminum foil. Turn the heat to medium-high, and steam for 2 hours. Add more water if necessary after the first hour.
  • For the sauce, mix together 1/2 cup of white sugar, brown sugar, butter, and heavy cream in a saucepan over medium heat. Cook and stir occasionally until the mixture comes to a full boil. Boil for 1 minute, then remove from heat and stir in the vanilla. Refrigerate until chilled, then beat with an electric mixer until smooth.
  • Serve slices of the steamed pudding with the brown sugar sauce, and a dollop of whipped cream.

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Preheat oven to 350°., In a large bowl, beat brown sugar, cream, melted butter, vanilla and egg yolks until well blended.   • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Mix together the flour, baking powder and salt. Set aside.

Steps:

  • Dissolve the baking soda in the hot water. Stir in 1 tablespoon of sugar and molasses, then mix in the cranberries and flour. Pour into a greased 6 cup steamer mold.
  • Cover the mold, and place into a steamer basket over boiling water. Cover the steaming pot. Cook over medium heat for one hour before checking, but it will take about 1 1/2 hours total. A toothpick inserted into the pudding should come out clean. Loosen the edges, and cool on a wire rack in the mold.
