GRANDMA RUBY'S BUTTERMILK POUND CAKE
This lemon butter pound cake is super-moist and dense. It's not for those watching calories! It's a great comfort food and goes especially well with vanilla ice cream.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Sift flour, salt, and baking soda together into a bowl. Repeat sifting process 2 more times.
- Beat sugar and shortening together until smooth and creamy. Add flour mixture, buttermilk, eggs, lemon extract, vanilla extract, and butter extract; beat until batter is just combined. Pour batter into prepared tube pan.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 75 minutes. Cool in the pan for 15 minutes before removing to a wire rack to cool completely.

- For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a fluted 10- to 12-cup Bundt pan.
- Beat the granulated sugar and butter together in a bowl with an electric mixer until creamy and smooth, about 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the flour 1 cup at a time, blending well after each addition, until the batter is smooth; stir in the lemon extract. Mix the lemon-lime soda into the batter and pour into the prepared pan. Bake until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes.
- For the glaze: Beat the confectioners' sugar, milk, lemon-lime soda and extracts together in a bowl with an electric mixer on medium speed until the glaze is smooth.
- Pierce holes in the cake with a skewer. Pour 1/4 cup glaze over the cake. Flip the cake onto a serving plate to remove from the pan, then pour the remaining glaze on top. The cake can be served immediately, but tastes even better the longer it sits.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Beat white sugar and 1 1/2 cups butter together in a bowl with an electric mixer until light and fluffy, about 10 minutes. Add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next.
- Sift flour, salt, and baking soda together in a bowl. Add 1/3 of the flour mixture to the butter mixture; mix well. Pour in 1/2 the buttermilk and beat until combined. Repeat adding the remaining flour mixture and buttermilk, beating well after each addition, and ending with the flour mixture. Stir lemon extract into batter. Pour batter into prepared tube pan.
- Reduce oven temperature to 325 degrees F (165 degrees C).
- Bake in the oven until a toothpick inserted into the center of the cake comes out clean, 60 to 75 minutes. Cool in the pan for 10 minutes before removing to a cake platter or plate.
- Beat confectioner's sugar, lemon juice, 2 tablespoons butter, and lemon zest together in a bowl until glaze is smooth. Pour about half the glaze over the cake; let cool. Pour remaining glaze over the cake.

This is the perfect old fashioned pound cake.

- 1. All ingredients should be room temperature. Preheat oven to 325 degrees In a mixer cream together shortening and margarine then add sugar. Mix until well blended ,slowly add eggs one at a time. Blend with your mixer on medium for about 5 minutes. Sift together all your dry ingredients. Turn your mixer on low..slowly add your flour mixture. Alternate flour mixture and milk until well blended. After flour mixture & milk are mixed in, add vanilla and your desired flavoring. Turn up your mixer to medium and blend for another 5 min. Pour batter evenly into a large deep tube pan and bake at 325 degrees for 1hr then increase temperature to 350 and bake an additional 15min. or til done. Check for doneness with toothpick or knife. Insert into middle of cake, if it comes out clean it's done.
- 2. You can use any flavorings you like such as Almond, Butternut, Lemon, & Orange.

- Mix the eggs, one at a time, into the batter.

AUNT RUBY'S POUND CAKE

- Mix sugar, butter, and Crisco together until well blended. Add eggs, one at a time. mix the flours together then add to suger mix alternating with the milk. When blended together, add both flavorings. Grease and flour a tube pan and put into a preheated 325 degree oven and bake for an hour. Cool. Serve plain, or with the glaze or cream cheese frosting.
LEMON BUTTERMILK POUNDCAKE
Steps:
- This moist, lemony cake is a perfect brunch or picnic cake.
- Set a rack in the lower third of the oven and preheat to 325 degrees. Butter a 10-inch bundt pan and flour the buttered surface, shaking out the excess. Combine butter, sugar, flour and baking powder in mixer with paddle. Beat on low speed 2 minutes. Combine remaining ingredients and add to mixer in 3 additions, beating 1 minute between each addition. Scrape batter into prepared pan and bake for about 1 hour, until cake is well risen and well colored and a knife inserted between the edge and tube emerges clean. Place cake on a rack in pan. For glaze, combine water and sugar and bring to a boil in a saucepan. Remove from heat and add lemon juice and vanilla. Unmold cake and brush glaze evenly all over outside of cake. Cool and wrap for storage. The berry compote, combine all ingredients, cover and refrigerate several hours. Serve slices of the cake with the compote.

This is my Aunt Faye's recipe. It's a pound cake, but it's not heavy at all. It's loved by many.

- 1. Preheat oven to 350 degrees. Spray tube bundt pan generously with Baker's Joy.
- 2. Mix ingredients for cake together until smooth. Do not overmix.
- 3. Pour batter into pan and bake for 55 -65 minutes until done (Use the fork or tooth pick test). Allow to cool for about 10-15 minutes and invert to serving dish.
- 4. While cake is cooling mix powdered sugar and lemon juice to desired texture. It is only a glaze, so it should been a thick nectar consistency.
- 5. Pour glaze over cake a little at a time spreading with the back of a spoon allowing it to soak into the still warm cake.
- 6. Serve warm or room temperature.....it doesn't matter!
