NEVER FLAT CHOCOLATE CHIP COOKIES
Here's the recipe that will ensure you never again bake FLAT cookies! Recipe and tips from my Aunt. *NOTE: My Aunt swears by melting the butter & shortening for a "better texture", but I'm removing that from the directions because I don't like the results. She also mixes by hand to prevent over-mixing, but I'm including the Mixer directions for those who prefer that. Basically the tips are: use a combo of butter and shortening, don't over-mix, keep everything cool, and don't over-bake.

- Preheat oven to 375 degrees.
- Combine the flour, baking soda and salt in a small bowl.
- In another, larger, bowl add the sugars, vanilla and milk; then cream in the butter and shortening by beating on medium-low just until there are no sugar clumps; *be careful not to overmix.
- Beat in (on medium-low) the eggs, one at a time; then gradually add in your flour mixture; *don't overmix!
- Stir in the chips and nuts; Regular sized Nestle chips melts fine, but regular sized Hershey chips don't melt fast enough.
- Drop by rounded tablespoons onto ungreased baking sheets; *Either rinse your cookie sheets in cool water between batches or cool them off in the freezer for a minute (if dough spreads when you place it on the sheet then the edges might burn and the cookies will flatten - no hotter than room temp); also keep your dough cool in the fridge between batches (this is VERY important).
- Bake for 7 to 11 minutes or until barely golden brown - if you over-bake then you risk all of your hard work turning into flatness.
- OPTIONS-.
- If you sub oatmeal or coconut for the nuts, then add in another 1 or 2 T of milk; Peanut butter chips or buterscotch chips can also be substituted for the nuts - the cookies will be a little moister.
- DO NOT ever use margarine.
- Salt compliments chocolate and nuts very well, but if you want to omit 1/2 teaspoon then that's fine.

- Heat oil in large skillet over medium high heat. Season chicken breasts with salt and pepper. Lightly brown chicken on both sides. Add garlic to pan and remove before it burns. Stir in red onion and cook until transparent. Pat herbs all over browned chicken. Stir in wine and bring to a simmer. Cover and cook for 15 minutes.

- Whip lard until creamy.
- Mix wine (or fruit juice), 1 cup sugar, 1 tablespoon cinnamon and anise.
- Add this to lard.
- Mix with wooden spoon.
- Add egg yolks; mix well.
- Add sufficient flour to make a soft dough; roll out 1/2 inch thick.
- Cut in desired shapes and place on greased cookie sheet.
- Bake 15 minutes at 350 degrees.
- Check often to prevent burning.
- Mix remaining cinnamon and sugar.
- Dredge cookies in this mixture while they are still warm.

AUNT SUE'S SMOKY CREAM CHEESE CHEESE BALL
A family favorite for years and years: it's just not Christmas/New Years/Easter without Aunt Sue's cheese ball. She borrowed the recipe from a co-worker at the telephone company YEARS ago and has adopted it as her own. Easy. Quick. DELISH. If you want a fancier version, use cream cheese, worchester, accent, green onions....but substitute proscuito for the beef and add chopped roasted red peppers and minced black olives.

- Leave cream cheese out of fridge to soften about 20 minutes.
- Finely chop green onions and Buddig Beef.
- Mix onions, beef, Worchester, and softened cream cheese thouroughly.

AUNT SUE'S HOLIDAY CHOCOLATE PECAN NEAPOLITAN COOKIES
These are very yummy and pretty for the holidays. They are fun to make, but the dough needs some time in the freezer. Also, I found that the chocolate takes quite a while to "set." I ended up placing the cookies on the wire cooling racks and setting them outside on the front steps for about 10 minutes. That did the trick. The refrigerator probably would too, but I didn't have enough room!

- Preheat oven to 350. Line a 9 x 5 x 3 in loaf pan with waxed paper and set aside. In a mixing bowl, cream butter and sugar. Beat in egg and vanilla.
- In a separate bowl, combine the flour, baking powder and salt. Gradually add to the creamed mixture and mix well.
- Divide dough into thirds. Add almond extract and red food coloring to one portion; spread evenly into prepared pan. Add green food coloring to second portion; spread evenly over first layer. Add chocolate syrup to third portion; spread evenly over second layer. Cover with foil. Freeze for 4 hours or overnight.
- Unwrap loaf and cut in half lengthwise. Cut each portion widthwise into 1 inch slices. Place 2 inches apart on ungreased cookie sheets. Bake at 350 for 12-14 minutes or until the edges are lightly browned. Remove to wire racks to cool.
- In a microwave, melt chocolate chips and shortening; stir until blended and smooth. Dip one end of each cookie into chocolate. Place on wire racks until set.

- Combine swirled and semi-sweet morsels in small bowl; set aside. Combine flour, baking soda and salt in small bowl. - Combine flour, baking powder, 1 teaspoon cinnamon and nutmeg in medium bowl. Set aside.
- Combine butter and 3/4 cup sugar in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add eggs and vanilla; continue beating until well mixed (1 minute). Reduce speed to low; add flour mixture. Beat until well mixed (1 to 2 minutes). Cover; refrigerate until firm (3 to 4 hours).
