DATE NUT BARS

I've had this recipe since 1938, when the girls I worked with game me a bridal shower. One of their presents was a recipe box filled with their favorites. Inside, I found this recipe, and I've used it for just about every occasion since. They're always well received.

Steps:

  • In a large bowl, combine the sugar, flour, baking powder, salt, dates and nuts. Add the eggs, butter and vanilla; stir just until dry ingredients are moistened (batter will be very stiff). , Spread in a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown. Cool bars on a wire rack. Dust with confectioners' sugar. ,

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

Can't remember where this recipe originated, but I do know that my family has been making them for years especially around the holidays.

Steps:

  • 1. Mix together in a 12" saucepan dates, butter, brown sugar and water. Cook over medium-high heat for 10-12 minutes or until thickens to a paste.
  • 2. Remove from heat and 1 teaspoon vanilla extract. Mix in 2 cups Rice Crispies.
  • 3. Allow mixture to cool to touch and then roll into small balls. Roll balls in shredded coconut or powdered sugar.
  • 4. Makes about 48 balls.

2-8 oz packages pitted dates
8 Tbsp butter
1 c brown sugar, firmly packed
4 Tbsp water
1 tsp vanilla extract
2 c rice crispies

My Grandma Made Date everything and the family members have always said how good Grandmas date bars are, I found her recipe in her recipes and here is is for all to share I hope you all enjoy. I haven't made these myself as I'm not into date bars and some of the directions seems brief, but I'm sure if your into making date bars...

  • 1. Cream shortening, add sugar and egg. Add flour, soda and salt alternatley with date mixture.
  • 2. Bake at 350 degrees about 45minutes.

3/4 c brown sugar
1/4 c shortening
1 egg
1 1/2 c unbleached white flour
1 tsp soda, salt-nuts
1 c dates
1 c hot water poured over dates. do this first so it will cool.

Steps:

  • Date filling: Combine 3 cups cut up pitted dates (about 1 lb), 1/4 cup sugar and 1 1/2 cups water in a saucepan.
  • Cook 10 minutes over low heat, stirring frequently until thickened.
  • Prepare date filling; while filling is cooking, preheat oven to 400°; grease a 13x9 baking pan.
  • Mix brown sugar, butter and shortning until blended; stir in flour, oatmeal, salt and baking soda until crumbly.
  • Press half of the crumbly mixture onto bottom of pan; spoon date filling evenly over crumbs, spreading carefully to edges of pan.
  • Sprinkle remaining crumbly mixture over filling; press lightly.
  • Bake 25-30 minutes or until light brown.
  • Cut into 2 x 1 1/2 inch bars while still warm.
