- In a bowl, combine the potatoes, 4 teaspoons oil and 1/2 teaspoon salt. Press onto the bottom and up the sides of a 9-in. pie plate coated with cooking spray. Bake at 425° for 20-25 minutes or until crust is lightly browned. Cool on a wire rack. Reduce temperature to 350°., In a nonstick skillet, saute onion in remaining oil until tender. In a bowl, combine the spinach, Swiss cheese, milk, eggs, egg whites, oregano, nutmeg, onion and remaining salt. Pour into crust., Bake for 25-30 minutes or until top begins to brown and a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

SAUSAGE, SPINACH AND POTATO TART

- For the dough: Add flour and salt to the bowl of a food processor and pulse a few times to mix. Add the butter to the bowl and pulse until the mixture looks like crumbly sand. Add the egg and water and pulse again until the dough comes together.
- Very lightly flour the work surface. Dump the dough onto the floured surface and knead a few times until it comes together. Shape the dough into a disc and roll out to a 13-inch circle. Press the dough into the bottom and sides of an 11-inch tart pan with a removable bottom. Level the edges with your fingers. Prick the bottom of the tart with a fork. Freeze until firm, 25 minutes.
- For the filling: Preheat the oven to 400 degrees F.
- While the tart is in the freezer, add the potatoes to a medium saucepan and cover with cold water. Add a big pinch of salt and bring to a boil. Reduce the heat to a simmer, and cook the potatoes until tender but still with a bit of resistance, 5 to 6 minutes. Drain and cool.
- Lightly drizzle the olive oil in a large skillet over medium heat. Add the sausage, and cook, breaking up with the back of a wooden spoon until crumbly and browned, 6 to 8 minutes. Add the spinach by the handful and stir until it just wilts down. Season the mixture with salt and pepper and stir in the green onions. Remove to a bowl to cool.
- Crack the eggs into a medium bowl and stir in the milk. Whisk together until combined and then add some salt and pepper.
- Remove the tart from the freezer. Cover the top with parchment paper and add pie weights or dried beans. Place on a sheet tray and bake for 20 minutes.
- Remove the pie weights and parchment paper and continue baking for 10 minutes more.
- Turn the oven temperature down to 350 degrees F.
- Evenly sprinkle the par-baked tart shell with half of the grated cheese, then the cooked potatoes, and finally top with the sausage and spinach mixture. Pour the eggs over the top and sprinkle with the remaining cheese. Bake for 45 minutes.
- Cool the tart for 10 minutes before serving. Can be served warm or at room temperature.
POTATO AND SPINACH PESTO TART

- Pre-heat oven to 375°F.
- Grease a large baking sheet.
- Thaw puff pastry.
- Thaw and drain spinach.
- Cook and drain potatoes- do not overcook- should retain their shape.
- In a medium bowl beat eggs and remove 2 tablespoons to be used later as a wash.
- Mix spinach, scallions, cheese, salt and pepper into beaten eggs.
- Flour a work surface and with a rolling pin roll pastry out to 12" X 14" and place onto greased baking sheet.
- Spread pesto onto pastry leaving a 1 1/2" border.
- Cover pesto with potatoes.
- Cover potatoes with spinach mixture.
- Fold the 1 1/2" border over filling forming a frame around the tart.
- Brush egg wash onto pastry border.
- Can chill up to 4 hours or cook immediately.
- Bake 25 minutes or till pastry is golden brown.

- Place the first 6 ingredients in a food processor; cover and pulse until chopped. Add the walnuts, lemon juice and zest; cover and process until blended. - KIDS: the writing in bold is for you. GROWN-UPS: the rest is for you. Pick the basil for the pesto. Get your child to pick the basil leaves off the stalks. Ask them to look at and smell the leaves as you tell them the name of the herb until they remember it - try to do this with all herbs when you can.
- Make the pesto. Toast the pine nuts in a pan over a low heat. A child of seven years plus can stir the nuts in the pan. Tip into a mini chopper (or use a pestle and mortar) with the basil, parmesan, garlic and olive oil. Blitz or pound into a green sauce, then set aside.
- Chop up the beans. Using a child-friendly knife, get children from the age of five to chop the green beans into shorter lengths, and quarter the potatoes. Younger children can snap the beans into short lengths while you prepare the potatoes.
- Cook the vegetables and pasta. Bring a large pan of water to the boil, add the potatoes and boil for 3 mins. Remove from the heat and ask the child to tip in the pasta and give it a stir. Put the pan back on the heat, boil the pasta for 5 mins, add the beans and cook for a final 3 mins.
- Mix everything together. Drain everything well and tip into a bowl. Spoon most of the pesto into the pasta and stir everything together to coat. Bring the large bowl of pasta to the table and serve with extra parmesan, more basil and remaining pesto, if you like.

- Boil the potatoes, whole and with the skin on, in unsalted water for 30-40 minutes. Peel them and coarsely mash. Clean and slice the zucchini. Pare and slice the spring onions, keeping a small amount of the green part. Sauté everything in a pan with 2 tablespoons of olive oil and a pinch of salt for 8-10 minutes. In a food processor or blender, blend the basil and pine nuts with 3 tablespoons of olive oil, a pinch of salt, and an ice cube to obtain a light pesto. Mix the pesto with the now cooled mashed potatoes. Add in the zucchini and onions, 3 tablespoons of grated cheese, salt, and pepper.
- For the dough: Mix the flour with 2/3 cup of water and 2 tablespoons of olive oil to obtain an elastic dough; let it sit, covered with plastic wrap, for 15 minutes. Roll out 3/4 of the dough to a thickness of 2-3 millimeters and press it into a tart pan (9 inch diameter, 1 inch deep).
- Fill the pan with the vegetable mixture and top with cubed mozzarella. Roll out the remaining dough into a circle, place it over the vegetable filling, and seal the tart along the edge, creating a rim. Brush the top with olive oil, pierce it throughout with a toothpick, and bake in a convection oven at 350°F for about 50 minutes. Remove from oven, let cool, and garnish as desired.
