PAUL'S FAMOUS SALSA
Pop some tomatoes, onions, serrano peppers, and garlic under the broiler, blend them with spices, cilantro, and lime juice and you've got a yourself a 30-minute homemade salsa.

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Combine tomatoes, onions, serrano peppers, and garlic in a large bowl; drizzle with vegetable oil and toss until lightly coated. Transfer to the prepared baking sheet.
- Broil in the preheated oven until vegetables begin to brown, about 5 minutes.
- Transfer vegetables to the bowl of a food processor. Add salt and cumin; pulse a few times until desired chunkiness is reached. Add cilantro and pulse a couple of times to combine. Stir in lime juice.

BABYCHOPS' FAMOUS SALSA
Friends from work used to hire me to make this salsa for work functions as I always used fresh ingredients from my garden, it is so fresh & healthy I hope you enjoy it! Sadly the bunnies & squirrels have discovered my garden site & I no longer have one... Fresh from the garden is best! This recipe will feed a crowd, it has just enough kick and lovely flavor from the habeneros so add at least one if you're a bit chicken. I often use some of the salsa in omelets the next day - or add to tacos, etc. It will only last a few days as other than salt there are no preservatives so make it the day you plan to eat it for best results.

Steps:
- Dice tomatoes by hand (food processor pretty much liquefies them so it's best to dice by hand),
- chop onion into small bits unless you prefer smaller,
- then throw into food processor with garlic & peppers & pulse until desired texture.
- Thoroughly wash, drain & chop cilantro, add all to a large serving bowl.
- Squeeze the limes over everything (don't forget the salt as it completes & enhances the flavor), mix well & enjoy with Mission tortilla chips (those are best unless you have home made).

Started making this salsa as a teenager. I get requests for it all the time. Seasonings are approximate, you can adjust to your own taste.

BABYCHOPS' BOMB DIGGITY CHEDDAR HERB BISCUITS
These are even better than cheddar bay biscuits, I was tweaking a buttermilk biscuit recipe I had and came up with this, these biscuits ROCK! Enjoy! Oh! And they're even better heated up the next day - 2 biscuits in the microwave for 30 seconds.

Steps:
- Preheat oven to 450.
- Combine first 6 ingredients.
- Pulse in cold butter bits until coarse meal texture with some pea sized butter bits.
- Add buttermilk & pulse until moistened.
- Mix in 2 cups cheese.
- Turn onto lightly floured surface and knead to combine.
- Roll out to about 3/4" and cut into circles, if you don't have a cutter take the top & bottom off a soup can, works just as well.
- Place biscuits onto a nonstick cookie sheet, spoon melted butter onto each & top w/remaining cheese.
- Bake in upper rack so bottoms don't burn for about 20 minutes until golden & cheese is melty.
- Enjoy! We couldn't get enough of them -- This recipe makes a mess of biscuits and they're even better re-heated (2 in the microwave for 30 seconds is perfect).
