BACKYARD BBQ SAUCE

From the Veganomicon. Excellent for BBQ Seitan Steaks in the summertime. This takes awhile to simmer, but it makes a lot, so it can be made early in the season then kept in the freezer for later use.

Steps:

  • Preheat a saucepan over medium heat. Place the onions in the pan and saute in oil until browned (about 7 min). Add the garlic and saute for another minute. Add all the other ingredients except the mustard and liquid smoke, and cook for at least 30 minutes and up to 1 hour, uncovered, stirring occasionally.
  • Lower the heat if the sauce begins to splatter everywhere. Add the mustard and liquid smoke and taste for sweetness/sourness. Adjust the flavors if you think it's necessary, and cook for 5 more minutes. If you like a smooth BBQ sauce then puree it, but thats not entirely necessary.

1 tablespoon vegetable oil
1 medium yellow onion, chopped as finely as you can
4 garlic cloves, minced
1/4 teaspoon salt
1 teaspoon red pepper flakes
28 ounces crushed tomatoes
1/3 cup molasses
1/3 cup white vinegar
2 tablespoons sugar
1 tablespoon prepared yellow mustard
2 teaspoons liquid smoke

This kid-friendly dish is about as simple as it gets, my friends. If you don't have the time to prepare the homemade barbecue sauce, simply make sure to buy a quality bottled sauce.This recipe is from "Emeril at the Grill" by Emeril Lagasse.

Backyard Barbecued Chicken with Homemade BBQ Sauce image

Steps:

  • Preheat a grill to medium-low, and brush the grate with oil.
  • Season both sides of the chicken legs with salt and pepper. Place the chicken on the grill, skin side down, and cook, adjusting the chicken's position and turning the pieces occasionally, until it appears to be about halfway cooked, about 15 minutes. Then use a basting brush to brush the chicken legs with the barbecue sauce, and continue to cook, turning the pieces frequently and reapplying barbecue sauce each time the chicken is turned, until it is cooked through and an instant-read thermometer inserted into the thickest part registers 160 to 165 degrees, 15 to 20 minutes. Serve the chicken hot or warm.

  • Sautee the onions. In a medium saucepan, melt the butter over medium high heat. Add the onions and garlic to the pan and cook, stirring frequently, until the onions are translucent and softened. About 4 minutes.
  • Add in remaining ingredients. Whisk the remaining sauce ingredients into the pan, stirring frequently, until the sauce comes just to a boil. Reduce the heat to medium low and simmer the sauce for 20-25 minutes.
  • Blend the Texas BBQ sauce. Turn off the heat and allow the sauce to cool to nearly room temperature. You can use the sauce as is, if you like the texture of the onions and garlic. If you prefer a smooth sauce, carefully transfer the sauce to a blender, seal the lid tightly, and blend on high speed until the sauce is a smooth consistency.
  • Refrigerate, serve and store. This sauce tastes best when allowed to rest overnight (24 hours for the best flavor) before serving. Serve alongside brisket, mop on ribs, or drizzle on cheeseburgers. Sauce will last 2 weeks in the refrigerator in a tightly sealed jar.
