CHOCOLATE-TOPPED PEANUT BUTTER-BACON BARS

Enjoy these delicious bars made using Betty Crocker® peanut butter cookie mix and bacon sprinkled with chocolate - perfect for a dessert.

Chocolate-Topped Peanut Butter-Bacon Bars image

Steps:

  • Heat oven to 350°F. Lightly spray 9- or 8-inch square pan with cooking spray.
  • In large bowl, stir together cookie mix, oil, syrup and egg until soft dough forms. Reserve 1/4 cup bacon for garnish. Stir remaining bacon and peanuts into dough. Press evenly in pan.
  • Bake 20 to 25 mintues or until golden brown. Remove from oven; sprinkle with chocolate chips. Return to oven; bake 1 minute. Immediately spread chocolate over bars. Sprinkle reserved 1/4 cup bacon over chocolate. Cool completely, about 1 hour or until chocolate is set.
  • For bars, cut into 4 rows by 4 rows. Store tightly covered in refrigerator.

1 pouch Betty Crocker™ peanut butter cookie mix
1/3 cup vegetable oil
2 tablespoons maple-flavored syrup
1 egg
10 slices bacon, crisply cooked, crumbled (about 3/4 cup)
1/2 cup chopped peanuts
1 cup semisweet chocolate chips (6 oz)

CHOCOLATE ALMOND BACON BARS

From the in-flight magazine on Southwest Airlines. I used Ghiradelli 60% chocolate chips, Nestle white chips, and nestle semi-sweet chips. The oil in the coating seems weird and is hard to mix in but the end result was right for coating. The white chips were a mistake, didn't firm up. Because the white is runny, these have to stay in the freezer. I also used raw almonds, chopped, and toasted in the pan I cooked the bacon in. Kind of weird but definitely man-candy. Everything is better with bacon!

Chocolate Almond Bacon Bars image

Steps:

  • Heat 1 cup heavy cream almost to boiling.
  • Melt dark chocolate in double boiler or microwave.
  • Mix melted chocolate and cream. Stir in almonds.
  • Pour mixture onto greased cookie sheet and freeze until firm.
  • Fry bacon until crisp and chop finely.
  • Heat 1/2 cup cream almost to boiling.
  • Melt white chocolate in double boiler or microwave.
  • Combine cream, melted chocolate, and bacon.
  • Spread over dark chocolate layer.
  • Place in freezer one hour.
  • Cut bars to desired size and freeze.
  • Melt semi-sweet chocolate in double boiler or microwave.
  • Whisk in vegetable oil.
  • Arrange bars on wire rack over pan and pour melted chocolate over to cover.
  • Freeze before coating other side.
  • Store in refrigerator.

  • In the bowl of a stand mixer fitted with the dough hook, combine all the dough ingredients until a cohesive dough begins to form. On medium speed, knead until smooth and soft, about 6 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter until light and fluffy, about 3 minutes. Gradually add the powdered sugar on low speed. Add in the cream and bourbon and increase speed to high. Beat for 3 minutes, or until very well combined and light. Transfer to a pastry bag fitted with a small plain tip.
  • Whisk together the glaze ingredients. Dip the bars into the icing. Immediately sprinkle with the bacon. Allow to set for 15 minutes before serving.
