BROWN SUGAR-SRIRACHA BACON BITES

Steps:
- Preheat the oven to 375 degrees F. Stir together the sriracha and brown sugar in a medium bowl; add the bacon pieces and toss to coat. Set aside.
- Line a large rimmed baking sheet with aluminum foil; place a wire rack over the foil. Spray the rack liberally with cooking spray. Place the bacon pieces in a single layer on the rack.
- Bake until the bacon is almost crisp, 15 to 20 minutes. Sprinkle the bacon with the toasted and black sesame seeds and bake an additional 5 minutes. Cool for 5 to 8 minutes, moving the bacon pieces slightly on the rack every 2 minutes to prevent sticking. (The bacon will crisp more as it cools.)
BACON AND PEAR BITES
Steps:
- In a skillet, fry the chopped bacon until crisp then transfer with a slotted spoon to a paper towel lined plate. In the same skillet saute onions, adding a sprinkle of salt and pepper to season. Remove the onions with a slotted spoon, and pile over the bacon.
- Using the same pan, add the butter and let it melt, but not brown. Stir in the pears and saute over medium-high heat to slightly brown, but remove before they become soft, about 5 minutes.
- Transfer the pears to a bowl and add bacon, onions and raisins; set aside.
- With a paper towel, wipe out the pan and add the walnuts. Stir and toss the walnuts to toast them and then remove when they become fragrant. Cool slightly, then chop and add to the bowl with the pear mixture.
- Put the mini filo shells in the cups of 2 mini cupcake pans. Add 1 teaspoon of the bacon mixture to each shell.
- In a saucepan over medium-high heat, add the orange juice, sugar and honey. Bring to a boil then lower the heat and cook until it reduces and becomes slightly thick, about 10 minutes. Pour 1 teaspoon of syrup over each cup and allow it to soak in, then repeat with another teaspoon.
- Refrigerate at least 1 hour or overnight. Serve at room temperature or serve warm by putting the pans in a preheated 250 degree F oven, about 20 minutes. Transfer to a serving platter and serve.
CANDIED BACON BITES

- Put the bacon in a container so it lays flat. Pour over the cola to cover. Refrigerate and let soak 2 to 3 hours.
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil, place a cooling rack over top and spray with cooking spray.
- Drain the bacon from the cola, place on the cooling rack and pat dry. Combine the brown sugar, paprika and black pepper in a bowl and toss to combine and loosen up the brown sugar. Sprinkle the brown sugar mixture on both sides of the bacon, pressing and patting so it adheres. Place the slices on the cooling rack; they can be close to one another but shouldn't touch.
- Bake until the bacon is deeply caramelized but still pliable (it will crisp as it cools), about 20 minutes. Flip the bacon occasionally as it cools to crisp on both sides. Let cool completely.
SWEET AND SPICY BACON BITES

- Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
- Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
- Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

- Preheat oven to 350°. Cut bacon strips widthwise in half; cut sausage links in half. Wrap a piece of bacon around each piece of sausage. Place 1/2 cup brown sugar in a shallow bowl; roll sausages in sugar. Secure each with a toothpick. Place in a foil-lined 15x10x1-in. baking pan. - Preheat oven to 375 degrees. Line a sheet tray with parchment paper.
- Place one cube of cheese in the center of each sausage patty. Mold the sausage around the cheese making sure it is tightly sealed.
- Next wrap a piece of bacon around the formed sausage. Place on the prepared baking sheet and freeze for 10 minutes.
- Bake for 30 minutes until the bacon is crispy. Serve with no sugar added ketchup.

- Combine all ingredients plus ¼ cup water in a small sauce pot. Simmer over medium heat for 10 minutes. Cool and serve.
REAL BACON BITS

- To make the real deal, fry 8 slices bacon until extra crisp. Drain on paper towels, then finely chop and spread on a baking sheet. Bake in a 350 degrees F oven for 5 minutes. Let cool on clean paper towels until most of the fat is absorbed.

I can't take credit for this recipe as it comes from the Pioneer Woman on the Food Network, but these are the most incredible, addicting snack/appetizer ever!! I did add the coarse ground pepper though, as that was not in her recipe.

- 1. Cut the pound of bacon in half, separate the slices & let set at room temperature to soften for easier wrapping.
- 2. Set aside same number of Club Crackers for the number of slices of bacon. This will differ from brand to brand of bacon.
- 3. Heat the oven to 250 degrees. Place a wire rack over a baking sheet & spray with cooking oil (I use Coconut Oil Spray).
- 4. Take a cracker & place a teaspoon of grated Parmesan cheese on it & carefully wrap one slice of bacon around it & place it on the greased wire rack. Do this to half of the bacon slices, then use the teaspoon of brown sugar for the other half of the bacon slices. This will give a half batch of savory bites & a half batch of sweet bites. Sprinkle coarse black pepper over all of the bacon bites.
- 5. Bake for 2 hours, yep that long, til browned & crispy! Keep an eye on them during the last 15 mins to make sure they don't start getting too dark. Mine usually takes the full 2 hours. Remove each of the Bacon Bites to a cooling rack until cooled through. Can be stored in Ziplock baggies or tin cans. Will remain crispy during storage.

- Mix together the cheeses until smooth. Stir in the peppers and scallions until evenly distributed; set aside.
- Trim the crusts from the slices of bread.
- Once the bread is trimmed, spread the slices with the filling, covering it completely.
- Roll the bread up from the short side, pressing down just enough to make it stick to itself.
- Wrap a slice of bacon and wrap it around the roll, overlapping the bacon to cover the bread completely. If you need more than one bacon slice, tuck the end of the second bacon slice under the end of the first. Trim the bacon when you get to the top of the roll.
- Freeze the wrapped rolls for 30 minutes to firm them up.
- To bake, preheat the oven to 350°F Lightly grease a baking sheet, or line it with parchment paper.
- Slice the rolls in thirds and place on the baking sheet, cut side down. Bake for 30 to 35 minutes (5 minutes longer if baking from frozen), until the bacon is crisp and the tops are golden brown.
- Remove from the oven and place on a serving platter; let cool for 5 minutes before serving.
