BROCCOLI AND CHEESE CASSEROLE
This vegetarian side dish is comfort food at its finest. Tender broccoli is sauced with creamy Cheddar and crowned with a buttery, crunchy cracker topping. It's sure to steal the show.

Steps:
- Preheat the oven to 350 degrees F. Butter a 2-quart baking dish or gratin dish.
- Melt 2 tablespoons butter in a medium saucepan over medium-high heat. Add the onions and 1 teaspoon salt and cook, stirring frequently, until the onions are translucent, about 4 minutes. Stir in the flour and stir to coat the onions. Cook for 2 minutes. Remove from the heat and whisk in the hot milk. Return to the heat and bring to a simmer. Stir in the cheese by the handful. Add salt to taste. Add the broccoli to the cheese sauce and pour into the prepared dish.
- Melt the remaining 2 tablespoons butter in a small skillet and stir in the cracker crumbs. Cover the broccoli casserole with the buttered cracker crumbs. Bake until bubbly and lightly browned, about 20 minutes.

Steps:
- Preheat oven to 375.
- Boil water to cook pasta.
- While water is boiling, fry bacon strips.
- Set aside on paper towel to drain.
- After pasta is cooked, drain and set aside in a casserole dish.
- Crumble bacon& stir into pasta.
- Also stir in broccoli.
- Over medium heat, heat milk in a saucepan& slowly stir in flour until smooth& slightly thickened.
- Stir in cheese until mostly melted& remove from heat.
- Pour over pasta mixture and stir until all ingredients are well mixed.
- Salt and Pepper to suit personal taste& if desired, sprinkle breadcrumbs and parmesan cheese over casserole before baking.
- Bake for 10-15 minutes, and let cool 5 minutes before serving.
BACON-BROCCOLI MAC AND CHEESE

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain macaroni as directed on package, using minimum cook time. Meanwhile, cook broccoli as directed on package.
- In 4-quart Dutch oven, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 2 tablespoons drippings. Cook shallots in bacon drippings over medium heat, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook and stir until mixture is smooth and bubbly. Gradually add milk, stirring constantly until mixture boils and thickens.
- Remove from heat. Add 2 cups of the Cheddar cheese and the Gouda cheese; stir until melted. Stir in cooked macaroni and broccoli and crumbled bacon. Spoon mixture into baking dish. Sprinkle with crushed crackers and remaining 1 cup Cheddar cheese.
- Bake uncovered 15 minutes or until bubbly and cheese is melted.

- Place broccoli and water in rectangular microwavable dish, 11x7x1 1/2 inches. Cover with plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on High about 5 minutes or until hot and crisp-tender.

- In a saucepan bring 1 cup water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
