ONION-BACON BABY CARROTS

Steps:
- In a large skillet, cook onions in oil over medium heat for 15-20 minutes or until golden brown, stirring frequently. , In a large bowl, combine the onions, carrots, salt and pepper; toss to combine. Transfer to a greased shallow 3-qt. baking dish. Cover and bake at 400° for 40-45 minutes or until tender. , Stir in syrup and butter. Sprinkle with french-fried onions and bacon. Bake, uncovered, 5 minutes longer or until fried onions are browned. Sprinkle with green onions. Serve with a slotted spoon.

CARROT BACON RECIPE BY TASTY
Here's what you need: large carrot, olive oil, salt, pepper

Steps:
- Preheat oven to 375˚F (190˚C).
- On a cutting board, use a vegetable peeler to peel the carrot into ribbons.
- In a small bowl, mix carrot ribbons with olive oil, salt, and pepper. Toss until well coated.
- Transfer carrot ribbons to a baking sheet.
- Bake for 10-15 minutes flipping halfway through. If carrots need more crisping, turn oven down to 300˚F (150˚C) and bake for additional 5 minutes, or until desired crispiness is reached.
- Enjoy!

BACON FRIED CARROTS
I got this recipe from a friend in South Louisiana. It is definitely not the "healthiest" of dishes, but it is ohhhhhhhhhh so good!

Steps:
- 1. Fry bacon. Take bacon out of pan. Toss the carrots with seasoning. Fry them in bacon grease with green onions in a covered skillet for 15-20 minutes, stirring occasionally. Then remove cover, stir in sugar and finish cooking carrots until tender and carrots slightly browned. If there appears to be too much bacon grease remove some of it.
- 2. When carrots are completely soft, remove them to a paper towel lined bowl for a few minutes to absorb any extra grease and then put into a serving bowl, crumble the bacon you fried and mix into carrots before serving.
FRIED CABBAGE WITH CARROTS AND PEPPERS
Cabbage is a staple in Gullah cooking, and there's so much more you can do with it than just coleslaw. This simple sauteed cabbage dish is one of my favorite ways to prepare the vegetable, and it's great with just about any protein. Better yet, it's a great dish to serve a large crowd.

- Heat a very large cast-iron skillet over medium-high heat. Add the bacon and cook until browned, 5 to 6 minutes. Remove to paper towels, reserving the drippings in the skillet.
- Add additional oil to the pan if needed. Add the onion, carrot and peppers and cook until the vegetables begin to soften, about 5 minutes. Stir in the cabbage and garlic and saute until the cabbage begins to brown, about 10 minutes.
- Stir in the hot sauce and bring to a boil. Cover, then reduce the heat to low and simmer until the cabbage is tender, about 15 minutes. Stir in the reserved bacon, and season with salt and pepper.
SAVOY CABBAGE WITH CIDER, BACON AND CARROTS

- In a large, wide pot (8 quarts or larger), saute bacon over medium heat until fat is rendered and the bacon begins to crisp. Add onions and carrots; saute for about 3 minutes. Add garlic; saute for 2 minutes.
- Add cabbage, caraway seeds, apple cider, vinegar, apples, bay leaf, and salt and pepper to taste. Saute, stirring, until the cabbage is tender, 10 to 15 minutes. Add butter, and stir well. Serve hot.
