Steps:

  • Preheat the oven to 325 degrees F.
  • Melt the butter in a saucepan over medium-high heat and fry the onion and jalapeno for a couple of minutes. Add the chorizo and saute until almost cooked, about 5 minutes. Pour onto a paper towel-lined plate to drain excess grease from the chorizo.
  • Pour the beans into a 13-by-9-inch baking dish. Add the mustard, barbecue sauce, ketchup and hot sauce. Add the chorizo mixture and stir it all together. Lay the bacon slices on top and bake until the beans are bubbly and the bacon is brown, about 1 hour.

2 tablespoons butter
1 large onion, diced
1 jalapeno, seeded and chopped
1 pound Mexican chorizo
Three 28-ounce cans baked beans
1/2 cup mustard
1/4 cup barbecue sauce
1/4 cup ketchup
Several dashes hot sauce
6 thin slices bacon

BACON LOVERS MEATY BAKED BEANS

We love the flavor of the smoked thick sliced Country Bacon that I get from Arkansas when ever I visit there, so I wanted to make my baked beans during this past holiday using it in a recipe, & this is the recipe I came up with. Lots of meat for my meat loving husband, & smoke flavor for that outdoor smoked grill taste. I made enough so I could give one pan to my neighbor, as it made 2 pans of 9X12 Each. After simmering on the stove top, I then baked them in the oven for an hour & 15 minutes, they were so thick & rich in flavor, & we enjoyed ours, & the neighbors loved theirs too.

Steps:

  • Chop bell Pepper and onions by hand or in food processor, into medium size pieces.
  • Using a large skillet or pot add the ground beef and cook over medium high heat until the ground beef is cooked and no pink remains. Add in the peppers and onions mixture about half way through & cook with beef. Drain any excess fat and liquid.
  • Cook the thick slice bacon until crisp tender. Then chop or cut into bite size pieces.
  • Repeat with the maple flavored bacon, and set aside till needed.
  • Return Ground beef to large pot, add in the drained tomatoes, mustard, apple cider vinegar, Ketchup,Molasses, Brown sugar, and stir to blend throughly, while continuing to cook over medium high heat, at least 20 to 25 minutes to allow all the flavors to blend together.
  • Add in the liquid smoke and chopped thick sliced smoked Bacon, continue cooking and stirring to prevent mixture from sticking to bottom of pot. TASTE AND ADJUST FLAVORS AS NEEDED, if more is needed.
  • Spray 2 9X12 size pans with cooking spray, then distribute beans evenly between the two pans. Top with the precook maple flavored bacon & then Place in preheated oven and bake for 1 hour and 15 minutes to 1 1/2 hours. Beans should have a thick consistency and taste amazing.

BAKED BEANS WITH BACON

This recipe was one of my mother's and was always a hit. The chopped jalapeno pepper spices it up a bit. It's an easy-to-remember recipe because most of the ingredients are 1/2 cup.-Nadine Brissey, Jenks, Oklahoma
