SHREDDED POTATO BASKETS WITH CHEESE AND BACON #5FIX

5-Ingredient Fix Contest Entry - This is my tasty version of a popular appetizer served at a local restaurant. The crispy yet chewy "baskets" made with the shredded potatoes (hashbrowns) takes this side dish to the next level and is a family favorite.

Shredded Potato Baskets With Cheese and Bacon #5FIX image

Steps:

  • Heat oven to 375 degrees F. Generously coat 2 6-compartment non-stick muffin tins with cooking spray. Set aside.
  • In a large bowl, combine the potatoes, egg and flour, adding just enough flour so mixture "sticks together". Divide evenly among the prepared muffin compartments. Using the back of a spoon, firmly press potato mixture into bottom and up sides of each compartment, making a "well" in each.
  • Place in oven and bake for 20-25 minutes or until just starting to brown. Remove from oven and divide shredded cheese evenly among cups and top each with crumbled bacon. Return to oven and bake another 5-10 minutes or until "baskets" are golden brown and cheese and bacon is hot, melted and bubbly.
  • Remove from oven and let rest for 5 minutes. To serve: gently run the tip of a sharp knife blade around rim of each cup to loosen. Release each basket and place on serving platter.

Steps:

  • Preheat oven to 350 degrees F.
  • Turn a large muffin tin upside down. Place a slice of bacon down the middle of the inverted cup. Place another piece of bacon perpendicular to the first piece. Continue to place bacon slices on cups slightly overlapping each piece until the cup is covered in bacon. Repeat on remaining cups until all bacon is used.
  • Place bacon cups in oven and cook 20-30 minutes or until bacon is golden brown.
  • Remove from oven and set aside to cool.
  • Cook potatoes in skillet according to package instructions. Set aside.
  • Beat eggs and half-and-half in a medium bowl.
  • Scramble eggs in a non-stick skillet over medium low heat until cooked through.
  • Assemble breakfast parfaits by spooning potatoes into bacon bowls and top with eggs and a sprinkle of shredded cheddar cheese.

5-Ingredient Fix Contest Entry. This recipe is an original for my family. My 6 year old daughter is on spring break and I thought of a delicious dish that is easy to make and fun so that my kids can participate. I included all of the ingredients that we like and combined them into a bread bowl that we created. I precooked the bacon, Simply Potatoes diced potatoes with onions, and hollowed out the knot rolls. I supervised my daughter as she added the cheese, potatoes and bacon portions into the the knot rolls and painted the rolls with the bacon grease before I placed them into the oven. The look on her face preping the bowls is priceless. My two year old son even got involved by placing the bread stuffing, that was extracted from the rolls, into a bag so we can save it for bread crumbs in the future. They came out so crispy, and cheesy with the delicious potatoes an bacon flavor. Mom loved them, the kids loved them and I loved them as well.. These breakfast bowls are a keeper.

Steps:

  • Preheat the oven at 375 degrees.
  • Heat a large frying pan on medium high heat until hot then add bacon.
  • Cook bacon until crispy then remove and break into halves.
  • Remove 2 tablespoons of the bacon grease into a small bowl.
  • Add one pack of Simply Potatoes diced with Onions to the pan and cook with the remaining bacon grease. Cook until light brown then remove and divide into 12 even piles.
  • Then take a knife and cut a circle from the top center of the knot roll. Remove the bread from within the roll; hollowing the roll.
  • Add cubes of cheese, one pile of the Simply Potatoes, bacon half, and topped with a few more cubes of cheese filling the bread bowl.
  • Place the knot roll top back on the center of the bread bowl; covering the top. Repeat the steps until all of the bread bowls are filled. Then add the knots onto a cookie sheet.
  • Take the small bowl with bacon grease and paint each roll.
  • Cook in the oven for 10 minutes or until golden brown and crispy.
  • Remove from the oven; Allow the bread bowls to rest for 5 minutes then and serve.

Steps:

  • Fry bacon pieces until crispy but not burned. Drain well and blot carefully. Try to remove as much excess fat as possible.
  • Mix bacon with chives and Simply Potatoes, Traditional Mashed Potatoes.
  • Scoop enough potato mixture to make a ball that is one or two bites. Roll into a ball, then push a cube or two of the cheese in the center and roll into a ball so that the cheese is all the way in the middle. The balls should not be very large or the cheese won't melt.
  • Roll finished ball in panko until well covered.
  • Fry in oil until browned all over.
  • Drain and serve as is or with condiments such as sour cream.

Steps:

  • Cover the bottom of a muffin pan with tin foil.
  • Take 4(1/2 slice) pieces of bacon and weave them together ( like a basket).
  • Lay across the bottom foil covered muffin tin to make a bowl shape press tightly to foil.
  • Repeat this process for the other five.
  • Bake in a preheated 350 oven about 20 minutes or until bacon is crispy ( may vary with ovens and thickness of bacon.).
  • Meanwhile prepare Simply Potatoes traditional mashed potatoes according to package directions. When fully cooked stir in 1/4cup shredded cheddar cheese.

  • Top each one with remaining cheddar cheese.
